Flax muffins /popovers

This is from the Adkins group but I have fallen in love with them and others may be looking for an easy breakfast idea also.  It is so simple, easier than scrambling an egg.

Flax popovers
1/4c ground flax
1/2t  cinnamon
1/4t  baking powder
1pk  sweetner
mix in a coffee mug and add
1 egg
mix well, bake in microwave for 1 min, turn out onto plate.

I can only eat 1/2.  I save the other 1/2 for snack.  I slice it and melt cheese on it for "cheese toast".  Flax has good fats and fiber so the are really healthy for you.

I went to a local co-op and got flax, but I think I've seen it at a regular grocery store too.  Maybe someplace like Trader Joes has it?

Walmart didn't have it but a whole foods or health food store would for sure.  I think I saw it at Ingles, a local grocery that carries some "special" stuff.

great fiber count.  I'm going to print this out and save it for a couple months down the road.  Right now if I eat anything with fiber in it, I feel like I've eaten the entire Thanksgiving turkey.

I buy the flax seeds in bulk at my local grocery store and then grind them in my Magic Bullet. I am a little nervous about eating them though. It seems every time I have some I get real constipated, even impacted. I drink lots of water but I think it is the kind of fiber that makes my stool too bulky. I just made some mini meatloafs and I used 1/2 cup of flax meal in it. I think next time I will cut it down to 1/4 cup.
