I'm looking for a good (and not too difficult) tilapia recipe. Any ideas? Thanks in advance!

Jody, I think you mentioned a parmesean one in the past but I'm not sure...

I've gotten really lazy about cooking tilapia. Season with seasoning salt and lemon pepper. I cook the fillets in the microwave until almost done, won't take much more than 1 min depending on the size and power of the microwave. Then spread a little mayo over and sprinkle with parmesan. Cook for another min or less until the cheese is melted. Dinner in less than 5 min.

I poached some last night. Heated to boiling water in a skillet big enought for the fillet. Just so the bottom is covered basically. Add soysauce and powdered garlic. Put the fish in, turn over and it's done.

Sorry no measurements but I don't measure anything while cooking. It's a shake of this and a little of that.

I have been using the mayonaisse and parmesan cheese on fish ever since it was given out as a sample at my grocery store.  I saute it in a little olive oil or PAM and it makes a nice crust.  I will have to try the microwave way.  Sounds very easy and quick!

I like spicy food--so I broil my tilapia after seasoning it with "steak seasoning" from Aldis.

i slice about 5 c;loves of garlic ...add chicken stock to cover and saute until getting transparent .. until fragrant . Add 3-4 cups organicfree range chicken stock , stir in i packet ( or 2 tablespoons ) butter buds and 2 tablespoons fat free promise if U want and U happen to have it .

The butter buds is important .... molly mc butter works too .. but its saltier . Juice a lemon and add the juice and pulp ( or lime - id use 2 )

Add 4or 5 frozen tilapia filets( walmart 's are nice) and allow to poach about 7 minutes then gently turn over with Ur spatula . U can add mushrooms , chives iif U like at this point ... I also like to add another lemon sliced thinly rind and all .

Last , add a bit of white or marsala cooking wine into which Uve stirred a tablesoon cornstarch if U want to thicken the sauce a bit .

serve with a touch of white pepper

YUMMO !
