Coconut Lemongrass Soup

 I'm on day 2 of full liquids and it seems harder than clear liquids. Maybe it's just that it's been so long since I've had anything with a decent flavor. I've decided the liquid phase is to convince us that we NEVER want sweet things again.

Today, we went out for Thai. I sipped coconut lemongrass broth from my soup and my husband enjoyed Pad Thai. I felt normal for the first time since surgery and the soup was HEAVEN!!! Just had to share.

 Love that stuff !   Its very easy to make  fat free at home too  ...  U can buy the  coconut  soup base  in a lot of grocery stores in the  ethnic section ....  and  use organic free range chicken stock to make it , fresh chicken breast  or fresh shrimp .... (  I put the  meat / fish  in the  undiluted  thick  soup base with just a little  sauce first to flavor it  before diluting )    add some sliced mushrooms, a few scallions  , and  finally just before serving ,  a spoonful of tom yum paste  ( this is not necessary but makes it even better )  

and  some  skim milk powder  diluted with water and  flavored with coconut extract  as a substitute for ****onut milk .    U wont notice the difference !

Yum!!! I got Thai soup when I was on liquids, too! :) I remember feeling the SAME way.. It was the most amazing soup I'd ever tasted!
