In honor of 2/18, National Crab-Stuffed Flounder Day, list a favorite fish dish

Believe it or not, today is National Crab-Stuffed Flounder Day.  In honor of that day, list a favorite fish or crab dish that you eat now.
(I don't have any yet, but I can't wait for my own Maryland Crab Cakes:

1 lb hand picked blue crab lump meat (already cooked)
1 egg, beaten not stirred
2 T light mayo
1 T worchestershire sauce
1 tsp dry mustard
1 T Penzey's Chesapeake Bay seasoning mix
4-6 saltine crackers, mooshed
Mix in order given, broil til heated through.

Hubby loves 'em on potato rolls. I love 'em naked.

Compliments of Itxazoa1957:

Crab Cake Sandwiches

Serves  8

Vegetable cooking spray
1/3 cup chopped onion
1/3 cup chopped celery
1 1/2 pounds fresh lump crabmeat -- drained
1 cup soft breadcrumbs
1/3 cup frozen egg substitute -- thawed
2 tablespoons reduced-calorie mayonnaise
2 teaspoons Dijon mustard
2 teaspoons reduced-sodium Worcestershire sauce
1/2 teaspoon Old Bay seasoning
1/4 teaspoon ground red pepper  (Use black or white which is spicier)
2 tablespoons reduced-calorie mayonnaise -- PLUS
2 teaspoons reduced-calorie mayonnaise
8 reduced-calorie whole wheat hamburger -- 11/2 ounce each
8 curly leaf lettuce leaves
8 tomato slices -- 1/4-inch-thick each
1 dash freshly ground pepper & salt

Coat a small nonstick skillet with cooking spray; place over medium-high
heat until hot. Add onion and celery; sauté until tender. Combine sautéed
vegetables, crabmeat, and next 7 ingredients in a medium bowl; stir gently
until blended. Shape crabmeat mixture into 8 (1-inch-thick)
patties. Place on a baking sheet; cover and chili at least 15 minutes.

Coat a large nonstick skillet with cooking spray; place over medium heat
until hot. Add crab cakes, in batches, and cook 4 minutes on each side or
until lightly browned.

Spread 1 teaspoon mayonnaise on one side of each hamburger bun, and top
with 1 crab cake. Top each with a lettuce leaf, tomato slice, ground
pepper, a sprinkle of salt and remaining half of hamburger bun. Serve hot.

What I have been eating most doesn't have a name, I made it up.  I take one frozen fillet, talapia, cod, whatever I have.  Put it in an microwave dish, pour a capful of lemon juice over it.  Season with seasoning salt and lemon pepper, cook in microwave until almost done, maybe 2 min, then put about 1tsp of light mayo, depending on the size of the fish, and parmesan cheese.  Stick it back in the microwave and finish cooking.  I have dinner in less than 5 min.  I do it every Wed and Sun nights when DH goes bowling.  Yum.

The crab stuffed flounder sounds delish.  Wonder where I can get that?  Maybe McCormick and Schmicks?   Sounds like a plan.... Maybe the DH will agree.  Hey, it's Friday, right?, fish fry night where I come from (Milwaukee).

I got these tillipia fillets with lobster and shrimp topping, individual frozen fillets, that I just micowave, fantastic.  However, they just closed the BJ's warehouse store where I got them in the past.  So I just joined CostCo, but haven't checked out any of their fish yet.

I love that there is a crab stuffed flounder day. I made some baked oysters that were good the other day. Butter and cracker crumb mix on the bottom, topped by oysters, topped with sauted onion, garlic and spinich, topped with shredded white cheese (I don't remember which one I used), topped with more butter cracker crumb mix.  I think I baked them for a very short while, like 10 or 15 min. 

I also made my own sushi last week with smoked salmon, cream cheese, and onion, and another with boild shrimp, fake crab, avacado, and cucumber. I used brown rice on mine and it worked well enough. The rest of the family got sushi rice.

I made spring rolls with boiled shrimp, fake crab, bean sprouts, and preshredded brocholi slaw. Not authentic, but I didn't have to chop anything.

We make sushi all the time. If only they'd make sushi brown rice....

Fake lobster roll ups

8 oz fake lobster chunks (our grocery store carries it near the fake crab chunks)

8 oz shredded smoked cheese (cheddar, mozzarella, and/or gouda - I like to mix them all up)

about 4 green onions chopped

2 pieced cooked bacon, crumbled

whole grain tortillas - I like the Carb Balance Plus small ones from Mission.

Mix everything but the tortillas together. Scoop mixture onto the tortilla, wrap, and nuke for 15-45 seconds, depending on the microwave. Makes 6-8 wraps.

We also like this mixture scooped into potato skins and broiled for a couple minutes - yum!!
