Parmesan Crisps

I made them today in the oven with parchment paper, they were so good. It filled that salty, crunchy must have.....

I make them often for that "crunchy, must have".  I get a 12 oz canister in the fresh cheese section at Costco of Shredded Parmesean.   

I just put them on a plate, no spray needed, and nuke them for 1 minute.  Cool and peel off the plate.  MUNCH!

That sounds the easiest yet.  I get parmesean, romano and asiago at Aldi and always have some.  I've been doing pepperoni that way too.  Gets the fat out and the crispy in.

I am going to make some Oopsie bread in the morning, that looks YUM-O. How do you typically eat it, I saw one person say its like a pancake and others its bun for burgers or bread for a sandwich what do you suggest?

Tomorrow night is the Kaiser support group from 6-7:30 if you can make it.  I'd love to meet you!

Oooopsie rolls.  I haven't made them in years but I'm going to over the weekend.  Mine don't come out like pancakes, they're a little fluffier and I use it as a bun.  They are so low carb that you can even use 2 to create a burger bun or a sandwich.   Make some and see what you think and then let me know.  :)

I have never been to a support group meeting I need to go one of these days, meeting you would be GREAT. This Wed I can't my DD is doing soccer training after school followed by her leadership classes homecoming dance routine each evening and my DH is busy building her lamb pen for her 4H project so he can't run her around. My kids have crazy schedules.

Here is Oopsie bread, I have not made it yet going to try it out today, I have heard its a great . bread

Oopsie Rolls/Flat Bread


3 large eggs
1 pkg 
Splenda/Truvia
dash of salt
pinch of cream of tartar
3 ounces cream cheese (not Tbsp!) Do not soften!

Preheat oven to 300 degrees.

Separate the eggs and add Splenda, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.

Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.

Makes 6@ about 85 calories a piece, >1 carb per serving
