Mexican Roast
This is so soft and tender i thought i would share.
2-3 pound roast
1lb dry pinto beans
2 cloves garlic
2 Tbsp cumin
2 Tbsp cilantro
1 can ro-tel
Mix all ingredients together in the bottom of a crock pot except the roast. lay the roast on top and fill with water til the roast is covered. Cover tightly and cook on high for about 10 hours. I usually put this on before i go to bed and it is ready to eat for lunch. Enjoy

Sounds yummy. I'm assuming a beef roast? Do you soak your beans first? I've always had trouble with beans getting done in the crock pot but maybe I haven't cooked long enought or turned it on high.
