Well, just call me plain boring!  I don't have to go into the office tomorrow but I'll be on call all day.  My project will be packing for my trip on Saturday.  If I get done early, I may go to a movie in the evening.   My other project is reloading all my my CD's on my new computer and getting it onto my iPhone that crashed last Friday leaving me with a blank iPod playlist.

After two luncheons at work, I'm not even looking forward to a dinner out with a friend tonight.  Too much food that's not what I simply prepare at home.

Saturday morning I'm leaving for the airport before 7am so I guess Christmas breakfast will be a protein bar or whatever I manage to prepare to take along. Maybe I'll make up some protein pudding which I think would pass inspection at security.   Definitely not airplane food.  Lunch will be the same.  I should arrive in Charlottesville at 7pm on Christmas day and I'm sure that dinner will be waiting for me.

Good luck in the kitchen Gina!  My favorite cauliflower is roasted.  Turn oven to 425.  Break cauliflower into little florets.  Spray cookie sheet so it doesn't stick.  Coat cauliflower with a little high quality olive oil and sea salt.  Bake for 20 minutes or so, turning once so the bottom doesn't burn.  Oh so yummy and reheated in the micro with a sprinkling of shredded parmesean is about my favorite food!    PS, you can throw any other veggies in the oven at the same time.   :)

WOO HOO! Im not cooking. I made Christmas Eve dinner last night LOL. We had a ham, taters and spinach. Nothing big but nutritious. We are heading to a friends house for Christmas Dinner and I am bringing the cheese and cracker tray and a fruti tray. From there ( weather permitting possible blizzard expected) headed to central Va to visit my sisters. NO DINNER TO MAKE AGAIN!!! I am so happy about this.

Well... I'm not cooking for the most part... but this is our schedule:

Thursday morning - Christmas with BFs girls and he'll make biscuits and gravy (and maybe eggs for me)
Friday morning - my kids here with me, and I'm making a breakfast pizza that is croissants as the crust with eggs/sausage/and any other goodies I can find to put in it, topped with cheese band baked
Sun morning - Christmas with BF's mom and brother's family

All activities are in the morning, so we have afternoons/evenings open, which is nice.

I can't give you any cooking tips... since I don't do much of it... but I'm sure it will turn out yummy!

Happy Holiday's fellow LW's,

Well cooking began Tuesday with all the various Rum Cakes and other goodies that I give away as gifts to friends and co-workers. The best part is I had zero carb cravings for all those old favorites. I was informed yesterday that apparently Christmas dinner is at our house. Sooo cooking has continued and will continue FOREVER, at least that's what it feels like lol. There will be plenty of sleeve friendly dishes as well as non-wls patient yummies.
Christmas day menu: Turkey, roast venison with red wine and rosemary, oyster dressing, green bean casserole, green bean bundles, grilled corn on the cob, caprese salad, mozzarella wrap (prosciutto, artichoke and roasted red peppers), roasted mashed cauliflower, maybe some craw-fish bread (personal specialty). Still haven't decided if I will fix any sleeve friendly desserts. My MIL will be in charge of the other sweets.

Let the marathon cooking begin..,ready...set... COOK.

P.S. I love my husband that's why he still has knee caps at the moment.

Christmas Eve, my husband's kids and grandkids are coming over so I will be fixing a ham, some cowboy cavier (black beans, corn, tomatoes, garlic, cilantro with some sweet oil vinegar),  pig in a blanket, chips and dip for snacking.  Then Christmas morning all my family will be heading to my sister's house for breakfast and I am taking my breakfast casserole.  I am sure there will be more food than you can imagine!  We always overdo...but it is soooo much fun!

Maybe I can get a few little bitty bites in!

We will be here tomorrow morning, breakfast will be scrambled eggs and applesauce for dh and I'll add toast for me. We leave about noon to get on the train and will be on there the rest of tomorrow until about 4:30 AM Christmas morning. Not sure what dinner will be as I don't know what is on the menu. We get picked up by my daddy at the station and will be spending the day and Christmas night at his house.

Not sure what is on the menu but we've warned my stepmom that dh is on pureed foods only, such as mashed potatotoes, scrambled eggs, ect. Then the next day, I drive home and he gets to collapse while I head to the grocercy store. Next week I start the diet class for MY surgery!!!!

Hey LW's...

I always cook and it's no biggie really. I love it..ya'll know that :) 

Nothing special planned for today through tomorrow BUT on Christmas day I want to make a breakfast casserole of some sort (the night before so I can just pop it in) and then we are having prime rib on Christmas day. I am also going to make a cheese and jalapeno cranberry salsa spread for some crackers. It truly is yummy. I'll only have the cheese and salsa stuff since I have worked so hard to decarb. Along with the prime rib I'll make some potatoes and greens and rolls. Nothing too fancy smancy. 

I so want to make mashed cauliflower one day. I will have to do that after christmas for sure. 

Maybe some tacos tonight and something totally untraditional tomorrow night :)

Here is the recipe for Faux Mashed Potatoes posted years ago on my diabetes list (faux mashed potaoes is mashed califlower). Don't know if it's the same recipe that Ruby Tuesday uses.

Faux Mashed Potatoes 

  • 1/2 large head cauliflower, cored and cut into 1-inch pieces(8 gr)
  • salt
  • 2 Tbsp. whipping cream .8 gr
  • 2 Tbsp. unsalted butter 0 gr
  • 2 Tbsp. freshly grated Parmesan cheese .2 gr
  • 2 Tbsp. Cream cheese .3 gr

Cook the cauliflower over medium heat in a large pot of lightly salted water until completely tender, 20-30 minutes.

Drain the cauliflower into a colander. With a bowl or small plate, press on the cauliflower to remove all the water. Toss the cauliflower (to remove the water) and continue pressing. This step is very important to the texture of the dish.

Transfer the cauliflower to a food processor. Add the cream and puree until completely smooth. If you like a chunkier texture, mash by hand, adding the cream after the cauliflower is mashed. Return to the pot. When you are ready to serve the puree, heat over low heat, stirring constantly. Add the butter, Parmesan and cream cheese. Stir until incorporated and season with salt if necessary. Serve immediately.

2.3 grams carbohydrate per serving.  Makes 4 servings
