Ugh! Son#2, a.k.a. my iron chef, has the menu planned but I think I'm supposed to cook it. DH and I had thought we'd just do a special Christmas breakfast...[enter the iron chef wannabe and my Benedict Arnold DH]. DH reads my Better Homes and Gardens when he's in the "library" and comes across the pork loin with rosemary, so here we go! About the only pork I do well is bacon and NC BBQ...this is going to be a disaster--I can feel it.  lol 

And you know what else? They are laughing at me because I want to order take-out mashed cauliflower from Ruby Tuesday so I don't have to experiment and mess that up too. I think I'll run away from home after breakfast...

Friday - Appetizer get together with DH family (I'm taking shrimp and crab with coctail sauce and a bread bowl with spinach artichoke dip)
Saturday - My family dinner (ham, cheesy potatoes, sweet potatoes, sauteed green beans)
Sunday - DH family dinner (pork loin, green beans, potatoes)

I'm cooking as little as possible. 

We're having the family meal on Sunday.  This takes the stress off the kids.  They can take care of all their other family and friends obligations on Friday and Saturday.  Sunday is all about us.  I'm cooking Prime Rib.  Actually I'm warming the fully cooked prime rib from my local grocery store.  It is very good and not to stressful.  I'll be putting together all the fixings including fruit salad which is our family tradition.

Until Sunday, DH and I are going to relax and not stress over meals.

friday CHRISTmas eve will be with my dh family and we have a complete fish dinner. talapia, smelts (eww)
shrimps, filet , calamari, im going to make macaroni salad,spagetti pie,develed eggs, and a bunch of festive cupcakes.
saturday CHRISTmas day ill be making manicotti i already made a chopmeat gravy but i used meatless crumbles by Boca it came so good at least i can eat it ;'-). im doing mass too at noon im excited. and sat night we r going to see " little fockers"

Fri: Dinner with the In-laws...pretty much the same meal as Thanksgiving (HUGE)

Sat: Xmas Seafood Feast at our home. Shark, oysters, shrimp...etc.... I am making a sf cheesecake

Sun: Dinner with friends...laid back leftovers around the firepit!!

Soooo much to do today...I'm such a procrastinator!!!

My family traditional Christmas eve dinner was Fish chowder but since no one in my family likes it but me, I'm making a tank of chili.  Christmas dinner is turkey breast, gravy, SF orange cranberry sauce, roasted asperagus, mashed potatoes, biscuits for the guys.  Low fat, SF cheesecake for desert.  Leftover mashed potatoes will become potato soup (with added protein) for later.  The only other leftover will be the cheesecake but I'm planning on putting enough protein in it I can have it for a snack so I can plan it in.

Have to work all weekend, so I get out of cooking! I am bringing a veggie tray to a party tomorrow night.
Just make sure you use a meat thermometer, and your pork loin should be great! I would get the take out, one less thing to worry about!

Morning Gina!!  I'm sure your Pork Loin will be a Huge Hit with the men in your family!!

We go to the Christmas Eve Service at our church.  It's my favorite part of the weekend. All of our family (minus 2 oldest DGD's who will be with their dad) will be with us and It is just so calming and the hussle of getting everything ready is over and I can concentrate on the True Meaning of Christmas. 

Christmas morning we will go to DD#1 house to watch Raegan open her gifts and then to watch Houston open his.   Then everyone comes to our house to open the mass of presents that will be under our tree.   A big breakfast with to many woman in the kitchen...LOL.  Then off to my Brothers for Christmas dinner and gift exchanges.  Then all of the girls have to go to their DH's side and DH and I get to relax (a little lonely).

Gina, if you don't have a recipe for the pork loin, I watched Guy Ferrita(?) cook one with rosemary.  It is probably on the Foodnetwork website.  It looked wonderful.  I'm sure yours will be great.  I love Ruby Tuesday's mashed cauliflower, but it should be pretty easy to make also.  I bet they put cream or something in theirs to make it taste so good.

Friday is my kids, DGD's Christmas at our house.  We do lunch and then open the mounds of presents that Grandma and Granddaddy went way overboard on!!  We always have grilled steak, baked potatoes and salad.

Saturday morning we will go to DS's and DGD#1 to see what she got.  Then we go to my Sister In Law's for Christmas lunch.  I always do the Chicken and Dumplings.  We will have the turkey, dressing, ham and all the veggies.  Plenty of desserts.  Saturday afternoon we will go to DD's and DGD#2 to see what she got(they like to sleep in).  Then DH and I will come home and probably take a nap!!
