Hello to all of my Lightweights!!!  If you are visiting WELCOME....PLEASE JOIN US and POST!!!!!

Writing everything down has helped me so much!!! I would really like to see some more posters.  Seeing what is working for others helps the rest of us put some variety in our meals.

Hi Roz!!! Today is a lazy day for me. I'm still sipping on my  in bed...yes, in bed...lol 
I have to go grocery shopping later today and get ready for the workweek but hey...that's later. 
Oh, and I am going to do some baking today...going to try my hand at biscotti and pumpkin cheesecake bites later. Some treats for the week. 

I'll post my basics for the menu for today and fill in the rest later since it's all improve today

B - Protein coffee (48g & 228 cal)
S - biscotti (2g & 100 cal)
L - ?? 
D - ??
S - Protein hot cocoa (28g & 167 cal)

Diana,
Let me know how the biscotti and pumpkin cheesecake bites go.  I would like to have the recipes.  I ordered some of the biscotti on line from one of the stores I get my protein from.  They were ok but pretty hard instead of crispy.

Hey Linda :) I think the pumpkin protein cheesecake bites came out YUMMY!!!  Here's what I did...

Filling: 

1 block of fat free cream cheese (8oz block) room temp
2 egg beaters (1/2 cup)
3/4 cup splenda 
1 tblsp vanilla extract
1/2 can pumpkin puree
1 tspn pumpkin pie spice
2 scoops of vanilla protein (mine is 24g @ 114 cal each scoop)

Blend cream cheese and eggs very well. To mixture add splenda, protein powder, vanilla, and spice. Let sit while you make the crust (optional)


Crust; 

4 full crackers of low fat honey graham crackers finely chopped (will yeild around 3/4 cup...add more if needed)
3 tblspns margarine melted

Pour the melted margarine over finely chopped crackers. Press mixture into whatever pan you are using. I used a mini muffin tin of 24 minis. 

Bake in 350 oven for 5-8 min. Remove and let cool to room temp. Add filling and place back in oven to bake until a knife or toothpick inserted comes out clean. Remove and let cool/set.

For the Biscotti...I followed this recipe:

I could not get the 32 slices...was only able to get 24...so, I am sure the calorie count on mine is about 75 cal...still great stats. Anyways, not too bad :)

The stats on the protein pumpkin cheesecake bites are.........drumroll....

Protein Pumpkin Cheesecake bites: 

Stats: 

40 cal per bite (mini muffin size)
3g of protein per bite
1.5g of fat per bite
3g of carbs per bite

Perfect bite size and has passed the test of the cheesecake lover in this house and the picky eater boy. :)

I think I'm going to try them both.  It might be a week or two because we are having my family Christmas this weekend.  Unless I get the things and do them one night this week.

Hello LWs
I did ok yesterday but ate a taco salad at a mexican place for lunch.  I didn't eat any of the shell or chips, but did eat the sour cream and quacamoli (sp).  Scale was up a pound this morning and I was too full to eat last night so I did a protein drink to get my protein in anyway.  I never seemed full while eating and didn't eat most of the lettuce but I probably haven't had that much fat since surgery.  Taking it easy today.
