I am on the challenge to make pumpkin biscotti and pumpkin cheesecake today. I LOVE to bake...I don't know the hell why since I have NO PATIENCE!!! But when I do...I think I can do a damned good job. But...these are recipes I have never tried before so a little nervous.
Anyways...I love to cook and my dishes have been so photogenic that I thought I would share the love and the recipes ...

Stuffin' Muffins
Carrots
Onions
Celery
Garlic
Stuffing (boxed is fine)
In pan, sautee chopped onions, garlic, celery, and carrots. Once they are nice and happy and soft and translucent, pull off heat and let cool for a bit.
Prepare stuffing. I use broth for the liquid. Once stuffing is prepared...add sauteed veggies and stir.
To mixture...add 1 egg or egg sub. Mix egg in well.
I used mini muffin tins but you can use any size you want. Spray muffin tin to avoid these bad boys sticking. Fill cups to top (they will not rise) and top with nuts or dried fruit.
Bake in oven 350 for 30 min or until golden brown on top AND they are firm when touched (with knife or spoon...don't burn your fingers!!!)
Let cool IN pan for a few minutes and gently remove and plate. Serve to a hungry crowd and get ready for compliments!!!
You can add ANYTHING to your stuffing you want or just do this plain ole jane. It helps with portion control and looks just damned cute!!!

I just did them on a whim, but they were fun! Well, I should say they were fun after I went through the entire mixing bowl and picked out every onion and celery piece (I hate them, and mom loves them). My boyfriend thought they were great and that I was so original. I just won't tell him someone else came up with them first!
Mashed taters:
Make regular taters but add along WITH your cut taters....some peeled cut parsnips.
When ready to mash up....use greek yogurt instead of sour cream/milk. If consistency is too thick, you can add some nonfat milk/lactaid/soy milk, etc to loosen it up.
It was yummy!!! Even the picky eater DS2 liked it. He said he didn't like the gravy I made (ugh, oh well)
