Good Morning. My fridge is full of leftovers...
Ahhhh, Thanksgiving.
Anyone else totally zonked this morning? Up here in NYC, it's dreary and a perfect day for...sleeping in. Which I didn't, because we're headed back to the cousins' house for a fun Leftover Day in Westchester, and my DS & DBIL will be picking us up at 11.
I had a few spoonfuls of the delicious squash soup (broth-based, not creamy) and that kindof filled me up. So while everyone else went up for the main course, I sat and talked to the chef. After about 20 mins, I went back and got a plate of turkey (dark meat) and spicy collard greens & brussell sprouts - yum! Everyone else was done and back to the game, but I slowly ate my food. It was delicious.
My cousins made me a yummy baked apple for dessert - just apple with cinnamon and nutmeg - and I ate that about an hour later while they had her pies.
AND YET I felt stuffed! I didn't overeat but I did eat the "dessert" a little too close to eating the dinner, I think. And I wouldn't usually have soup plus food.
Maybe this is why I feel so groggy this morning???

I grazed yesterday too....bad me bad me....anyways...
I grazed on chexmex (evil) and I did have venison salami and cheese...yes, on crackers...someone invited the carb monster and him and I were exclusive yesterday. Oh wait, it was me who must have invited him cuz I bought the damned items at the store...lol It was a tactic to keep the boys out of my kitchen...and well, the rest is history....lol
Dinner was a blast to make. All the food was wls friendly. Yes, even those good carbs were made without sugar!! Yams glazed in orange marmalade (sf) and cranberry juice (diet) and tossed with toasted pecans....yum!! Mashed taters with parsnips mashed/creamed with greek yogurt!! Added protein baby!! They were VERY yummy. Cornbread stuffing with veggies, fruits, nuts sauteed and added. Made stuffin' muffin' (with the help of DS2) they were a hit!! Brussel sprouts glazed in balsamic vinegar. And the turkey of course ~ dry brined and stuffed. He took a lot longer (2hrs more than originally projected) but well worth the wait!!! I don't think it was completely thawed in the meaty parts...but hey, it is done and it was sooooo gobbly good!!!
I only ate a bitefull of each and couldn't do more. But each bit was yummy.
I didn't make desert cuz FIL brought in 2 costco pies...pumpkin and pecan. I took a little of the pumpkin....bad joo joo....down for the night.
It was a great night and I look forward to being very creative with the leftovers. Also look forward to changing the traditional holiday foods in my house to wls friendly!! DH is lovin' it...DS2 well he's a picky eater and the only thing he caught was the potatoes. Next time, I will sweeten with splenda the greek yogurt before adding to the potatoes. I personally could tell what was in it and it tasted very rustic...everyone else enjoyed it but DS2...he knew something was amiss...lol Oh well, next time...lol
I hope y'all have a great day today!!

I didn't cook nearly as much as I normally do, but I still have some left. I sent some to my SIL & BIL and sent a lot home with DD and her family.
I did not do the smart thing and eat protein first. I enjoyed all the things that I don't normally eat especially the chicken & dumplings. Of course by last night I was not feeling very well and stood up one time and almost passed out. I checked my blood sugar and it was ok so I'm guessing it was from my very bad day of eating. I did get my protein in with protein drinks yesterday.
Well today is another day and I have done much better today. I did go shopping today so atleast I walked alot today and ate much better.
