Hi Roz!  Happy Hump Day!  Back down to 123 this morning.  I can live with that!

B - 2 protein coffees and a few regular ones thrown in
L - tortilla bean soup - but no tortillas in the recipe - go figure.  Its more like a chowder...
This is what is in it:

1 can of black beans, drained and rinsed
1 can of refried beans (can use fat free)
1 can of corn (try and find one with spicy flavors) I used one that had mixed in peppers and beans.
cubed and cooked chicken (however much you want)  I used 3 chicken breasts and it wasn't really enough for the double batch
Salsa to desired consistency (I also had some leftover diced tomatos in the fridge I threw in for good measure) ( used chunky medium)

Heat and stir all together.  I doubled this recipe and have leftovers for lunch for the rest of the week (unless my son gets into them).  He loved it too!  It is thick and would be great as a dip too (probably hence the tortillas).  He also melted cheese on top of his....

It had a nice bite to it, but not real spicy or hot.  Just right...  You can adjust that by the corn and salsa if desired.

D - leftover above maybe... might go out for dinner with ex-DH.  He's helping me move some stuff to his house for storage tonight.

vits:  yes
Water:  will do good today

You must have the sweetest EX...what happened between the 2 of you?

Thanks for posting the receipe!  I'm sure it will be a hit!!!

Glad to hear you are back down to 123.  I've been struggling with 2 pounds and it just won't come off.  I don't want to get too comfortable here.  It seems the more I think about it though, the more I want carbs.

Um...that recipe sounds YUMMO!!!

So, I'm going to steal it for tonight. I made a huge batch in the crockpot last night of pork center loin roast. I use it for pulled pork (leaner version). Well, felt lazy and we went to the local grill and I had chili instead. So I have a ton of this cooked pork. So I am going to make the soup and add shredded pork to it and add green salsa too...

DH will be very excited to have this!!

Thanks for posting and sharing   I bet it freezes VERY well too!!

Hi All!!  I have been getting so busy at work lately that I barely get a chance to get on here during the day, and at night the last thing I want to do is get on my pc most days!

But now that I am in maintenance, I feel it is important to at least go on to fitday each day and keep track of my eats.

S: peanuts, apple
L: 1/2 wheat sandwich thin, rotisserie chicken, a few garlic & parm pita chips
S: cottage chz w/ pineapple
D: meatloaf and some sweet potato

I'm glad to hear you are still posting your menu on fitday.  It's good to keep track every day.

How is maintenance going for you?  Are you maintaining or still losing?
