Good Morning. Anybody got their Thanksgiving meal planned already?

I've started a list but as soon as Son#2 comes home it will change.

Turkey or turkey loaf or just turkey drum sticks
stove top dressing
turkey gravy from a jar
boxed scalloped potatoes with extra cheese
green bean casserole
something with pumpkin--maybe low carb pumpkin cheese cake

Ideas appreciated and please include recipes.

Funny that you posted this. I've been up since 3a.m. (DH had to leave early for work) and it's my day off working out, so I have been baking. I am assigned dessert for 3 Thanksgivings this year, so I'm doing trial runs on different healthy ones. Yesterday's was kind of a flop, so round 2 this morning and after a store run, round 3. I'll let you know how they turn out. I'm also supposed to bring an appetizer to two of our gatherings, so I'm doing a veggie tray with greek yogurt dip. I have to do stuffing, and I'm doing boxed too.

Here's the recipe for pumpkin custard that just came out of the oven and it smells and looks better than the one I tried last night

3 eggs, 1/2C sugar (I used Splenda), 1 1/2 C skim milk, 3C pumpkin, 2 tsp vanilla, 1 tsp cinnamon, 1/8 tsp nutmeg, 1 1/2 tbsp cornstarch

blend all with mixer, put in sprayed 9x13 pan, bake for 15 minutes at 400, then reduce to 350 for 45 minutes

I did the nutrition facts and if you slice it in 12 pieces it's Cal:51, Fat: 2, Carb: 7, Prot: 3.5

I'm making a cake later (I'm testing my own version of pumpkin bread or Autumn cake)

1 white cake mix, 1 can pumpkin, 1/2C dark chocolate chips, 1/2C chopped walnuts
mix all together, put in sprayed 9x13 pan, bake according to box directions

This one is not as good, but still better than most desserts. Slice in 16 pieces

We volunteer and go out for Indian food afterward.  Tandoori turkey ... yum!

I normally cook every year but I am supposed to be in Kansas with SIL. I will have what ever she will be serving. I am however, making a special desert that is friendly to my picky,picky,picky pouch.

Ok, dessert #2 is soooo good! It's more like a pudding, can't really slice it like a pie. I'm going to make that for at least one of my dinners and put it in cute little cups. I'll let you know on the cake later.

Hubby and son go to Atlanta to his sisters for Thanksgiving.  I stay home to take care of the animals (which is really an excuse to not go).  I have been invited to 2 places so far but have told both I will just come for leftovers.  I love having the house to myself and hubby will bring leftovers so I will get more Thanksgiving that I need without having to cook anything.

That cranberry posted earlier sounded good;
1 bag cranberries
1 jar SF jelly
1c water
1c spleanda
Coo****il the cranberries pop and it thickens.

I have to work till midnight Wednesday, so Honey will be making Thanksgiving dinner.  This will be our last holiday together as a family for a year, before Honey leaves.

Deep fried turkey
butternut squash soup made with pablano peppers..YUMMMOOOOO
some kind of stuffing
canned jellied cranberry sauce.  I might make some sugar free for myself.
some kind of veggie
garlic mashed potatoes
one lonely nuked sweet potato for me
pumpkin pie
deviled eggs

There might be more....dunno

We will have the traditional turkey dinner - turkey, stuffing, mashed potatoes, gravy, cranberry sauce, either corn or green bean casserole, dinner rolls, pumpkin pie.  I normally go wayyyyyy overboard on desserts - many pies, cookies, ect but this yr Im limiting it to pumpkin pie and some sort of sf pudding pie.  The traditional Thanksgiving dinner is my all time favorite meal.  I really need to have a game plan this year to keep myself in check.    Cindy
