Anyway, I made catfish muldown from a recipe I got from Jan, a.k.a. "Georgia Pink". I used a thick lean bacon and fewer potatoes than most would use but it was so good. DH ate 2 bowls and I had a small bowl. I tried to Google it to give you more info but there just isn't much about it. It must be a good old down South thing. I think you guys tha****ch the fat content can alter the recipe some and use a butter substitute but here it is the way the recipe came to me. If you use skim milk, I imagine you can thicken it with corn starch.
Jan's Recipe for Catfish Muldown:
It is not really a recipe as much as it is a throw together. We used to make it while camping out on the Altamaha River back in the day. Now we make it in a dutch oven on top of the stove. This is the basics. You can add whatever you want to....
Spray your pot with Pam.
Layer bottom with good thick bacon
Then layer chopped onions and bell pepper (I use "colors" when folks may be coming to help us eat it.)
Then layer catfish portions (some ppl use nuggets)
Then quartered potatoes.
Lots of salt and pepper and whatever other spices you like.
Then repeat the layers...bacon, onion, bell pepper, catfish, potatoes, salt and pepper.
When you get all the layers you want--fill with just enough water to cover all of it.
Cook on medium until potatoes are done. DO NOT STIR.
When taters are done put in 1/4 to 1/2 stick of butter and fill pot with Half and Half.
Let it sit in the pot and coo****il butter melts and milk becomes hot but do not boil and still DO NOT STIR.

Very interesting. Has a lot of the same stuff as my fish chowder so I'm thinking it would be really good. You could certainly use skim milk and leave off the butter since it has the bacon. My chowder also uses clam juice which adds a good bit of flavor that you could use to replace the water and would add more flavor when you cut the half and half and butter.

LOL - Gina, I had to read to see what you scored!! Yes my mind was in the gutter....
I saw this when you put it on Menus and Miles yesterday and was wondering about it. I'm going to print it and might try it next weekend. My DH loves fish. I'll have to change a few things, but it sounds really good.
