I had a lot of fun and we took lots of pictures so they would remember their first Halloween party. I'm my DD's #1 Fan but  I missed out on so much Fun.

I still haven't found Fiber One Twigs.  I'm going to look on their website and see what the packaging is like.  I must just be missing it.

Here is what the package looks like (it's called "original"): http://www.fiberone.com/product/Cereals.aspx  I love to eat it in my greek yogurt with berries.  Fills me up and keeps things moving in the right direction!

Hey Roz! We had a super busy but fun weekend with our bonfire Saturday and the clean-up on Sunday. It was beautiful and felt good to be outside! I still did great with my totals for the most part, and the scale is only up .5 today. Back to the real world and the piles of homework I did not touch all weekend.

L: 1/2 turkey sandwich, cucumber, carrots
S: apple, carbmaster yogurt
S: special k protein bar
D: pork "fried rice" (riced cauliflower)
S: protein shake, snow peas

Water: 88oz so far (think I got dehydrated this weekend or too much sodium)

Shannon, how do you make the pork "Fried Rice"?
I like the mashed califlower and the cheese califlower.  This would be something different to make with it.

Take a bag of frozen cauliflower, put it in a covered dish with no water and microwave for 8 minutes. Then take off the lid and drain, and let cool completely. Shred with cheese grater or ricer into rice-size pieces, put a small amount of sesame oil in a skillet and brown the rice until golden. Use fried rice seasoning, add egg whites, and any veggies and meat you like in fried rice.

I also just found a recipe for cauliflower pizza crust. We are having that later this week. I'll let you know how it goes. I've been doing a whole grain ready to use crust or low carb tortillas and making a ranch pizza that is so good, so this time I am trying the cauliflower.

mix cooked and cubed chicken or use the pre-grilled strips with 1 tbs ranch dressing seasoning, mix the rest of the seasoning with fat free mayo, spread the mayo on the crust, top with chicken, fat free mozzarella and halved grape tomatoes (or any other veggies). It tastes so "bad"!

Thanks Shannon.  The Fried Rice sounds good, I'll have to get the things to try this.

That pizza sounds wonderful - let me know how the cauliflower crust works out.  I have used the small low carb tortillas and also the Arnold's wheat thin bread for crust for pizzas, but sometimes the bread just doesn't sit real good in my pouch.

I am just now able to eat bread again. I use the Healthy Life bread. It's pretty low carb and high fiber. Also, it tastes good.
