Menus and Miles Sunday October 3rd

Microwave spaghetti squash to soften it about 6-8 minutes whole.  Then cut in half lengthwise and scoop out seeds.  Place cut side down on a plate and put several tablespoons of water on it and microwave each half 6-8 more minutes - depends on size.  Use a fork and scrape from side to side not lengthwise to get "Spaghetti Noodles" out.
Today I used spaghetti squash, wedges of laughing cow cheese(garlic & herb), Hood calorie countdown milk and egg beaters.  Layer spaghett squash and cheese in a baking dish.  Mix milk and eggs together, add salt and pepper.  Pour mixture over squash & cheese - bake at 425 until set.
You could also make it with eggs and regular cheese just like you do regular home made mac & cheese.
I use the spaghetti squash in place of noodles in several dishes like baked spaghetti.

Great variety and totals!   Where do you buy your SF pie filling?  I just ordered some from Netrition because I haven't been able to find it locally.

I only had Raegan today and it was so nice.  She actually let me cuddle her a little and we took a short nap together ( I got up and started the cookies when she was sleeping sound) .  It is so calm when Houston isn't here hitting and biting her.

Hi Roz!  I was starting to get worried about you!

I went out and bought a new sleeper couch today.  Got tired of having no place to put up any visitors/guests.  Hope its comfy!!


B - 1 protein coffee and a regular coffee
S - 1 piece of leftover pizza
D - sushi!  OMG I ate way too much but it was SOOO good!  DD and SIL and DGD went to dinner before they headed home.
S - something with protein mixed into it

Vits:  yep
Water:  doing ok - not great
miles:  none today

I need to get a sleeper coach.  We have 3 extra bedrooms that are all full with DD#3 and family living here and then this week DD#1 and DGD are staying here too because her DH is on a hunting trip.  She is sleeping on the coach and DGD is sleeping on her mattress from her bed.  My house is always full.

I'm lacking in Protein today.  I need to change my post.

Way too busy painting the inside of the house this past week and this weekend.  Short on protein today . Will be back on schedule tomorrow.  Went grocery shopping today to get a stock of healthy foods in for the week.

We desperately need to paint our house inside.  My DH keeps our yard picture perfect outside but the inside never seems to get done.

Today was a strange day of eating. I ate oatmeal for the first time since surgery. I wanted to carb up a bit because I went on a nine mile run. During the run, I ate some carby gooey gels too. So, I probably had more carbs today than I have had in six months. I seriously felt awesome on the run. I think on those days when I do a long run, I need to get those carbs in.

Now, I'm in a hotel by the airport. Taking off for Tucson Arizona tomorrow and will be in he desert for 9 days!

I will be online sporatically......when I'm not working or by the pool! :)
