Xpost - Peanut Butter Heaven!
I have been craving Peanut Butter lately in the worst way!
I was trying to find a WLS friendly Peanut Butter cookie recipe but didn't have much luck. Then I found this recipe for Peanut Butter Coconut Flour muffins. Coconut flour is very low carb and gluten free.
I tweaked the recipe a bit and added 7 tablespoons of Vanilla Protein Powder and an additional egg to the recipe. I also used only 3 tablespoons of the Splenda Brown Sugar blend and probably could have used less as the Vanilla PP is sweetened.
I ended up with 14 mini muffins.
Each
Cal: 101
Total Carb: 6.37g
Fiber: 1.86g
Sugar: 3.38g
Protein: 8.76g
I think I'll increase the Protein to 10 tablespoons next time as that will increase the protein to over 10g per muffin and 108 calories.
FYI, coconut flour does NOT bake well in silicone bakeware.

I made some muffins and froze them probably over a year ago - yummy! But - I have a problem leaving things like that alone.
