Good Mornin'. North Carolina BBQ...MmmMmm!

Put country style ribs in the crock post yesterday at noon and turned them off at midnight last night. Put them back on warm and basted them this morning 'til breakfast was done and cleared away. Pulled the pork from the bones and tossed in 3 Tbs vinegar, 1/4 tsp paprika, 3 dashes of liquid smoke and a few turns of fresh ground black pepper... also added some leftover vinegar sauce we got in the mountains last month. This batch is perfection if I do say so myself. Now, I have to hide it from Son#1 when he comes over today. He's getting grilled burgers and that's it! He would eat 1/2 this batch, if I let him, and try to take the rest home...it's that good! You can take the girl out of North Carolina but you can't take the North Carolina out of the girl!

Good Lawd you are making my mouth water!!! I am trying to be so good to get these last couple of pounds off! I love and hate cookouts, my aunt makes the best potato salad, I made my favorite pasta salad, there will be chips, etc. It's carb overload...but I will try to avoid it all!

 Hey, I'm taking a detour and coming to your house for dinner!!  

I'm having a great day.  I walked 3.5 miles this morning and now I'm going to get cleaned up and take a day trip to Sonoma, up in the wine country.  Lots of lovely little shops, great restaurants and the company of a good girlfriend.  

This morning I'm at High School graduation weight of 176 on the mark!  I am so much healthier in so many ways since that day in 1968.   Getting older brings a lot more self-confidence, wisdom and ability to connect with people.

I did great on my 1.5 hour hike yesterday.  I was able to speak, even on the steepest hill climbs.  I loved it so much that I'm doing it again tomorrow morning.  This is like a new me that my son helped create this summer.

I live in Eastern NC. I used to love BBQ! Nothing better than a BBQ sandwich with slaw on Saturdays. I have not had luck with pork since surgery. I thought about trying it again yesterday but chickened out...literally ! There is a place down the road from my house that is only open on Saturdays. They have BBQ and Chicken every weekend. You can smell it a mile away! Good luck in keeping your son's paws off your BBQ.

Nothing tastes as good as this feels!

Gina, oh my gosh--I miss NC BBQ.  I lived there 25 years ago, and haven't been back in 15 years.  Love Judges BBQ in Morganton, NC.  The best was (hope it still is) Sims in Dudley Shoals.

My Son-in-law LOVES BQ ribs!!!   I used to order them before surgery but I just can't eat them now, but they smell so good.  I bet your Son will smells yours too.  It's hard to hide the aroma of crock pot food.  Good Luck with that!

Oh man - I guess I missed it.  I'm just now checking since yesterday morning.
It sounds delicious.

What did you put in the crock pot to cook them in?

Did you get some shopping done?  I finally got my house cleaned this afternoon after everyone left.

In the crock pot? Salt and pepper. That's it. The secret's in the sauce. (Fried Green Tomatoes quote) Vinegar base NC BBQ sauce...super low carb.

Babysitting in the morning. Not sure when I can get out to shop because DH will want to play golf tomorrow. I might do a little bit while he's on the course if he waits until noon to go out.
