the spaghetti squash has a very hard shell and often people cant figure their way around that ....
you can either start baking it in a bit of water ( steaming it actually for about ten minutes , then cut in half and scoop out the seeds ( bake those too they are delicious)
or just soften the whole darn thing in the microwave ...and then cut n bake .... teh first way takes longer but is better i think ...

Roz, I'm so sorry for DD#3. Did we know she was expecting?? Both mine were expecting at the same time and I was so afraid something would happen and it would be a constant reminder to the them.
It doesn't look like you are coping by eating food! That's a good thing because that is what I always turn to when I am stressed. Your family continues to be in my thoughts and prayers. My DH had a dear friend of his die a couple of years ago from cancer and he was telling me the other day how much he still missed him and would love to just have a conversation with him once more. I told him one day he would get that chance!!
Isn't is strange how we can connect over the internet and I feel like some of you are closer to me than people that I actually see everyday!! What a great thing.
Hope your mom's test goes ok and your week gets better - it's almost over now.
Spaghetti Squash is pretty good. I have to mix it with something and use it like pasta. I put the whole thing in the microwave for 6-8 minutes. Then cut it in half, scoop out the seeds, put it on a plate with a couple tablespoons of water and put that half back in the microwave for another 6-8 minutes if it is a large squash 10-12 inches - smaller would be less time. Then I cook the other half the same way. Take a fork and rake from short side to short side this keeps the strands longer it seems like it would be the opposite way. It falls apart kind of like noodles. Just use it the way you would any pasta in any recipe. DH actually really liked the Baked Spaghetti. I used jar sauce and 93% ground beef and shredded cheese on top. I've made homemade mac & cheese with it and really liked it also. It has a lot less carbs than pasta.
Hope you have a great day today.

Hi guys! I have been slammed with stuff this morning! There is so much to do to get into the nursing program besides classes. This afternoon I have to go get a TB skin test and the first hepatitis shot. This morning I had to go round up my immunization records, register for a CPR class, go to an orientation, and some personal errands.

Sure hope I can break this stall soon..... clothes getting looser, but scale stays the same...
I know you would like to have the scales moving, but I lost most of my inches during my stalls. It's kindof like your body needs to catch up.
Awesome Menu and Protein target!
