My favorite low carb addiction right now is noodleless lasagna :)
Noodleless Lasagna
16 oz of Ricotta Cheese
1 Cup grated Parmesan
2 large Eggs, beaten
1 Cup Marinara Sauce
1 Cup Shredded Mozzarella Cheese
1 Pound (loose) or Package (links) of Italian sausage (Add more if you want!)
Mix the ricotta cheese, parmesan cheese and beaten egg together and place in a 8 x 13-ish oven proof dish. Fry up the sausage and crumble it on top. Blot some of the grease off the sausage with a paper towel or napkin if you need to. Spread the marinara sauce on top of sausage and top it with the mozzarella cheese. Bake it in the oven at 450 for about 30 minutes or until its hot and bubbly. It freezes and nukes well.
