Favorite Post-WLS Recipes

INGREDIENTS
- 2 pounds ground turkey
- 1 cup milk
- 1 cup Italian seasoned bread crumbs
- 2 eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 pound Colby cheese, cut into 1/2-inch cubes
- 1/2 cup ketchup (optional)
DIRECTIONS
- Preheat oven to 400 degrees F (200 degrees C).
- In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
- Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

there are some modifications that i make that lower the fat to next to nothing and its still super yummy! i half the recipie. it just seems like too much food otherwise! i use egg beaters rather than regular eggs. also, low fat colby monterry jack cheese because thats my fav! =) i use shredded cheese rather than cubes and its still yummy. i've heard that the cubes simply make it so that you have little pockets of warm melted cheese vs cheese spread thru out. since i half the recipie, i cook it at 375 for 45 mins and it comes out oh so moist. i use whole wheat bread crumbs too and will add about a teaspoon of garlic and onion powder. i also don't put any ketchup on it since my 4 year old refuses to eat anything with red. =)
