Yummy Summer Desert WLS Friendly
So my mother in law just cant stand the fact that she cant figure out how to feed me something for desert when we go over there for dinner, so last time I was over there we were going through some of her old Weigh****chers cook books looking for something that we could alter and that I would eat. (I am not going to eat it if it doesn't have some protein value!!)
This is what we came up with and I LOVE IT!! And I even calculated all the protein for ya'll so you don't have to do it!!

What ya need!!
1 container of low fat small curd cottage cheese 24 oz (dont use fat free as it is to thick and doesn't have the liquid necessary)
1 8oz tub of free coolwhip softened
1 20oz can of crushed pineapple in its own juice drained
1 box of sugar free fat free instant pudding (this is your option, pistachio and butter scotch work well with pineapple, chocolate works well if you wish too (I like the chocolate with strawberries))
What ya do!!
In a medium bowl mix the cottage cheese and the pudding for like 2 min till theres no more pudding chunks. Stir in the pineapple, and cool whip until well blended.
What ya get!!
A yummy light fluffly tasty creation. One cup is 160 calories and 4 grams of protein, so half a cup is obviously 80 calories and 2 grams of protein.
I think that I might be able to add plain protein powder to it, but I'm scared to ruin a good thing haha!

My grandma makes this at EVERY holiday. If I liked cottage cheese I would eat it. It all tastes good except the cottage cheese. EWW. I just can't stand the texture. My mom and I have both had the WLS. We always make a fruit salad. We just do a fruit ****tail(in LIGHT syrup and rinsed), mandarin oranges(light and rinsed), apples, and bananas. Then we just mix it all up with light whipped cream and YUM! I love it so much. That's how I get by for holidays/dinners. Haha.
anything in syrup of any type light or heavy makes me dump...
I have to get things in their own juice...
Sorry i guess its not going to be for everyone, but I just learned about it and thought id pass along.
A fresh fruit salad, or fruit with whipped cream is always a good way to get through any desire for desert!

Yup. I totally feel you. My MIL always stocks cottage cheese when we go to visit, because when I went down to see her the first time post-op I was 1 month out and living on cottage cheese, so she knows it's safe.
And the dessert sounds yummy.
