Mexican Layer Dip - good for Super Bowl!
I made this last nite and it was yummo... Im sure it follows a lot of other recipies but wanted to share because it was so good.
I took a 9x9 pan
Put a layer of FF refried beans
Layer of taco meat mixed with kidney beans (I use 94% lean ground beef. Cook meat in a pan drain off fat, add a can of drained rotel mexican, a package of old el paso taco seasoning, 1/4th cu water... let cook a few minutes then add in a can of drained washed kidney beans, cover and simmer for a while. The kidney beans really bulk up the meat and give you fiber... it also makes a little meat go a loooooong way)
Layer of tomatillo sauce
Layer of LF Kraft Mexican Cheese Mix
Baked that until the cheese was bubbly
layer of sour cream (mixed a little hot sauce and old el paso into it - sppppicey!)
Then added a layer of pico de gallo (tomatoes, onions, cilantro in lime juice)
layer of chopped lettuce
sprinkled chopped jalepenos on top
I had baked blue corn chips and baked tortillas served with it.. I ate most of mine with a fork because it was goooooood. Would also make a good lo-carb tortilla filling.
First visit to surgeon - 288 ~ bmi 45.1
2 week pre-op 252 ~ bmi 39.5
Total lost - 153 Since surgery - 117!
Goal weight - 155 (mine) 180 (surgeons)
Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)
1/14/2025 still maintaining 135 :-)
