Stupid question ....
I don't think you HAVE to as long as you are getting enough protein in...I am definitely hungry about every 2 hours and feel tired if I haven't eaten protein within that timeframe....I eat a lot more often now than I ever did, just a lot less. Not sure about any rules about it though as long as you are getting your protein you need!!!
Eating twice a day is not enough... you should be at minimum eating 3 meals. There is no way you can be meeting your calories/protein only eating twice a day (unless you are relying on protein shakes). The typical plans are either 3 meals, 3 meals 1-2 snacks or 6 small meals a day. The reason for eating every 2-3 hours is not only to allow you to eat enough due to our small meal sizes but to also help to keep metabolism and blood sugar regulated. Eating only twice a day your metabolism is going to be sluggish because you arnt giving it any fuel. By eating every few hours you keep it going and keep those calories burning.
Also over time your hunger may return... by not eating enough you can 'rush' that fact or possibly make your hunger stronger than it would have been if you were eating every few hours. By developing good eating habits now you can keep the hunger away or at least know how to 'handle' it. At this time you should be teaching yourself the eating habits you will use for life - do you feel eating only twice a day is something you can do for the next 40 years? Eventually your body will 'adjust' to the surgery and your habits so again its important to make sure you develop good ones! As time passes you will need to eat more and more... I started out at 500 calories immediately post-op and am now at around 1000 (I had proximal procedure). There is no way I could eat 1000 calories in only 2 meals unless I was eating very high calorie junky foods... with that said if I was eating junk then I really couldnt be getting in quality lean protein, fruits and veggies.

Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)

It's individual. You do what works for you. As I have always said, there are no universal truths to WLS, only majority opinions; but most are individual rules. And anyone who tells you there are any universal truths is doing you a huge dis-service. Do what is best for you as an individual.
Good plan on seeing a NUT. I was having a debate in my head about how to reply, and that was a big thing I wanted to mention. Your surgeon really should have sent you home with a plan, and it is their fault for not preparing you and making sure you had tools and guidelines for eating. This is a really different way of eating, so structure is really important early out especially when you are just starting out.
Here are some basic seemingly universal guidelines based on MY observations from hanging out on obesity help for years and having an excellent nutritionist.
In a day you are going to want 50-70 grams of protien, less than 80-100 grams of carbs, and around 700-1000 calories a day. This is of course in addition to at least 64 oz of clear liquid (like water, crystal light, 100% fruit juices and decaff teas). To hit those nutritional amounts you are probably going to have to eat 3-6 times a day. At every "feeding" focus on protien first, then complex carbs like veggies and whole grains.
My nutritionist and surgeon subscribed to the "eat every 3-4 hours" school of thought so I never get hungry and I keep my blood sugar stable. It works really well for me because I basically don't have time to graze in between feedings. But I know other people who do just fine eating 3 times a day. Hopefully if you meet with a nutritionist they can help you come up with a plan that will work best with your lifestyle and needs.
