Cauli-Taters or “Mock Mashed Potatos”

(Blended is better) Optional: add cheese, garlic, sour cream, FF cream Variation: add 1-2 Tb LF sour cream, put in casserole dish, sprinkle liberally with parmesan cheese and bake at 400 for 20 min.
Pureed frozen fruit (sorbet/sherbert)
Puree your favorite fruits in blender/food processor. Add sweetener to taste. Or add low carb/diet juice Pour mix into a container that is about 1/4 larger than you need. Toss it in the freezer. About once an hour go and stir it. Stir more frequently for small amounts (For 1 pint container, mix every 30-60min). Flavors:
*Banana, strawberries and OJ
*Unsweetened Coconut, crushed pineapple, banana.
*Cantaloupe and raspberries with a splash of juice.
*Strawberries, kiwi and applesauce.
Mock Cheese Danish
2 oz. fat free Philly cream cheese, stirred smooth
1 egg, beaten into the cream cheese
3 packets of Splenda
dash of vanilla
dash of cinnamon
Mix all ingredients smooth in a custard cup. Put in microwave on high for 90 seconds. It will come out with a little moistness from the cream cheese. This is called a mock cheese Danish but it is more like a custard/ cheesecake type thing.
Home made Pate
Put any kind of allowed meat in a blender and blend with cottage cheese or another soft cheese or sour cream or just a little liquid.
Be sure you make sure your meat has good flavor- marinate it, stew it, braise it in sauce, etc. before you blend it, but shake off the excess flavoring agent.
Use chicken, turkey, shrimp, crab, lobster, tuna, etc. Use spices and herbs to make it taste good. Don't make a whole bunch at once, but go for the variety. Try salmon with a little liquid smoke flavor, mesquite tuna, shrimp and ham.
hey y'all....i know it's not part of the soft food category (i'm a lil under a week out)...so i'm still on full liquids, but luckily full liquids also includes grits!!!
I'm a good ole southern boy, so me and my grits get along real well. You may want to try them if you like em or even if u never tried them before, they are the best in the world! 1 pre-made pack flavored from the store will get ya 2 meals on average....but i typically buy the container that u measure urself and cook on the stove. And it has some protien in it....1-2 grams....lol i said some, not a lot. :)
