I make a stir fry with:

1 lb. peeled shrimp, sesame seed oil, ginger, garlic, fresh spinach, fresh scallops, 1 "milk box" of orange juice, sweet onions, sweet peppers, and orange peel grinds....    it's so yummy and i have dinner for the week!!!

My favorite dinners to make from scratch are baked chicken tenders:

I coat smal pieces of boneless skinless chicken breast then spray 'em down with non-stick cooking spray and bake them until they start to turn golden brown - flipping once.

Turkey meatloaf with bbq sauce baked on top

lunch:

leftovers or turkey rollups with cheese

My current dinner favorites mexican style shredded chicken put 2 chicken breasts in a crock pot on high, add 1/2 a packet Old El Paso seasoning (NO water)... I also add some green chilis and fresh salsa to it.. you can do whatever you like. Cook on high for 2 hours then shred. I put the chicken into a lo-carb wrap... I sometimes put FF refried beans or rice (yellow or brown) in the wrap then add the chicken, sour cream and some tomatillo sauce (I skip the cheese!) the chicken is really juicy and moist and reheats really well. If you dont want to do the bread this is great on a salad or in a bowl mixed up. meatball 'subs' I take 1 package of Trader Joes turkey meatballs and soak in Trader Joes Maranara (no sugar added!!) for about 2 hours... the sauce is a lil blah so I add garlic, fresh basil and chopped up zuc/squash (I love to hide veggies in stuff!!). Then I thinly slice the meatballs (I put about 2 in a half pita) and put them in a 1/2 whole wheat pita with a slice of RF mozz cheese... then sauce to your liking.  Both of the above reheat very well and I take the leftovers for lunch! I eat a pretty plain lunch... either leftovers or I like to take turkey breast and wrap it in a green lettuce leaf (instead of bread!) I sometimes chop up some cucumbers and put them in there as well. Ill have that with some fruit, veggies and maybe some soy hearts (they are like chex mix-ish made by genisoy) or some melba toast.

Trader Joe's Turkey Meatballs are good! There is a lot of great stuff there for us. I like the little mini pitas, and cucumber yogurt sauce. I eat them with the meatballs, it's kind of like a gyro...
