What I'm makin' for dinner

I loooove quesadillas. So occasionally I treat myself. This is a new one I'm gonna try tonight. It looks really really good. And its good for ya. Ok ok, its high in carbs...but they are good carbs. You can cut back some by using low carb tortillas....that is if you like rubber carboard. Not me. I'll have the real thing and just cut back on carbs during the day. The carbs here come mostly from the black beans and the corn....so adjust if you must. Black Bean Quesadillas w/Tomatillo Salso 8 ounces tomatillos, husked, rinsed cut into quarters (about 8) 1 small red onion diced 1 jalapeno pepper seeded and cut up 1 Tablespoon fresh lime juice ¼ cup cilantro leaves ½ teaspoon salt non stick cooking spray 1 15 ounce can black beans drained and rinsed ½ teaspoon ground cumin ½ teaspoon chili powder 6 10 inch white or dried tomato flour tortillos 1 ½ cup fresh corn kernels (frozen ok) cooked 1 large tomato diced 8 ounces reduced fat cheddar cheese (about 2 cups) shredded plain yogurt (optional) 1. For the tomatillo salsa, place tomatillos, onion, jalapeno, lime juice, cilantro, and salt in food processor (magic bullet). Cover and pulse with several on-off turns to desired consistency. Set aside. 2. Preheat oven to 350° Lightly coat 2 large baking sheets with cooking spray, set aside. In a medium bowl stir together black beans, cumin and chili powder. 3. Place 3 of the tortillas on the prepared baking sheets. Spread each tortilla with about ½ cup of the black bean mixture, ½ cup of the corn, 1/3 of the tomato and ½ cup of the cheese (reserve ½ cup for topping) 4. Place another tortilla on top of each prepared tortilla. Press lightly. Evenly sprinkle tops with the remaining ½ cup cheese. 5. Bake for 8 minutes or until cheese melts. Serve hot, cut into wedges, with tomatillo salsa and plain yogurt if desired. Makes 6 servings. Each serving: 360 calories 12 g total fat (6 sat fat) 27 mg cholesterol 46 g carbs 6 g dietary fiber 19g PROTEIN

It sounds fabulous! I will not eat the low carb tortillas - they are disgusting as is most of the low carb stuff out there. But have you tried the whole wheat tortillas? they are not at all rubbery and have fiber. I don't feel the least bit guilty eating tham. I use them for quesadiilas and I use them for roll up sandwiched for my lunches a lot. 1 tortilla and 2-3 oz lean deli meat, a little mustard and some baby lettuces or spinich and roll up. wrap in foil or plastic wrap and put in my lunch box, and the tortillas hold up well with out getting soggy and nasty.
