Stuffed French Toast - anyone have a good recipe?
My DH, both of us PO RNY patients had some fabulous stuffed French Toast last year at a small French County Inn - B & B in southern Wisconsin last fall. We did not ask how it was fixed but we guessed that it was with cream cheese or Ricotta. I can kind of figure out how to recreate it but am at a loss on how to make the stuffed cheese, with a sweetened cream cheese mix or with Ricotta. I kind of need to be pointed in the direction on the amounts of Ricotta/cream cheese to Splenda, blah, blah. I found a Splenda recipe for more of a Ricotta bread pudding bake in a Splenda cook book but nothing for a French toast that has a softened cheese sandwiched between the slices. Any would be great. Smooches.
