Latkes - uuuuuuuuuugh! And me with only limited Krusteaz (mock for Matzo) to make them with. I'm so dead next year lol. My roast turned out wonderful too! And on time! That's a first for me in well...years! I'm notorious for late dinners Happy Holidays!

Tooter! What kind of roast did you make? I practically ruined my prime rib ($250 worth)! I still do get excited when everything gets done on time though (or should I say, at the same time?) and I haven't forgotten anything! ... Everyone said it was good though Hope you had a great holiday, Karyn

I did a Top Sirlion Tip - same as I do every year. I cook it for 30 minutes per pound at 350. I start it out in a preheated to 450 degree oven, put it in the oven and immediately reduce the temp. It's drizzled in olive oil and seasonings and set on a bed of rough-cut veggies and then the whole thing is wrapped tightly in foil. HTH! Great holiday!!! Thanks

Hey here is some food for thought for you. Every Christmas I do a HUGE pork tenderloin roast (in these parts a good $25 - $35 cut of meat). On Christmas Eve evening I inject that sucker with butter (yes indeedy, real butter), Tony Chachere's creole seasoning and soy sauce). Then on the outside I rub something like Mrs. Dash and koshor salt. I wrap it tightly in several pieces of aluminum foil and sit it still on another very large cookie sheet (have to sit it caddy corner). I put it in the oven for ONE HOUR ONLY at 500 degrees. After that hour I turn the oven down to 170 (as low as my oven goes) and leave the oven door shut overnight - DO NOT PEEK!! When you get up in the morning you have the most succulant pork roast EVER! If you are lucky you have lots of juices from the meat also. These roasts are so very tender cooked like this and it is so easy on my pouch! Okay....just thought I would send that one for you

Why thank you. I also served this with it (a new recipe I concocted). My family loved it: Spinach Artichoke Casserole 1 Stick butter or oleo 2 pk (10 Oz.) frozen spinach 1 lg Can artichokes 1 pt Sour cream 1/2 c Onion; chopped 1/2 c Parmesan cheese ½ c cheddar cheese 2 cups cooked rice Salt & pepper Cook spinach as directed. Drain well. Saute onions in butter. Mix all ingredients together and place in 1 1/2 quart casserole. Stir in the cheeses and sprinkle some on top. Bake in 350 degree oven for 20 to 30 minutes. Serves 8.

it was an eventful weekend.. was good over all. I had all my kids here Christmas Eve.. nephew, 1 sister and Mom, we had a nice dinner and then gifts. Christmas morning my step-mom was admitted to the hospital, then we lost my Dad old [meaning he didn't go where he was supposed to go] man making us worry, he was supposed to leave the hospital and show up at my sisters, hours later, after I had been to the hosp. then drove to my sisters, still no Dad. Since my parents were divorced many moons ago, he didn't think he had the "time" to spend with us since his "time" was about up. We postponed Mom for an hour in order to have our Christmas with Dad. Dad sobbed yesterday.. my Daddy never cries, he's a tough old goat.. but his wife is dying, literally Scirosis of the Liver, she has never drank a drop in her life, she had cancer when she was younger and that was before the pro's knew that too much chemo was harmful and that's what did her liver in. She was admitted with pneumonia.. liver functioning at only 20%.. I had to wish her Christmas greetings from across the room as I have no auto-immune system in place either now. After the old folks left.. my sister, neices we got goofy and finally laughed and had fun.. Then I drove home at 11 pm in the thick snowfall, like 0 visability.. 30+ miles of where's the lines on the road driving.. finally when I got up to town, we could see the roads again. hugs,

That sounds..er umm well, interesting and somewhat entertaining lol. Sorry about you stepmom though! My guests fell asleep - mom always said that was a mark of a good meal I hope she was right!
