Good Morning all,My goals today were to clean house-done,get my water in -in the process of,Laundry-doing right now,post on here- in the process of,go to a appoinment-soon,and then finally come home and take some time out for myself and think about the things going on in my life and to figure out what I want to do about them.Well have a good day everyone!!! my goal is to try to make myself rest, I had an injection into my hip yesterday for bursitis and it is real sore. Dr said I could do gentle activities today and see how I feel tomorrow. I didn't sleep much last night with the pain, even with 2 Darvocets and a muscle relaxer on board. I feel guilty laying around doing nothing. I did bake some no sugar added banana bread and a no sugar pumkin pie I have been craving since someone posted they were eating pumpkin pie a few days ago. So I made it with splenda. I found last thanksgivng that it is unbeleiveable that I cannot tell that it has no real sugar and neither can anyone else. my big pile of laundry is calling my name but I am plugging my ears.

Low fat banana bread, (buttermilk substitutes for most of the oil.) 2 large eggs 1/2 - 3/4 C splenda 1 cup or 3 medium sized ripe bananas 1/3 C buttermilk 1 Tb vegtable oil 1 Tb vanilla 3/4 c flour 3/4 C whole wheat flour 1/4 cup wheat germ ( or just use either flour, the original recipe used only 1 3/4 C regular flour, but I need my fiber LOL) 2 ts baking powder 1/2 ts baking soda 1/2 ts salt using electric mixer beat eggs and splenda in a large bowl til lite and thick, mix in bananas, buttermik, oil, vanilla. sift flour baking powder, soda salt over mixture and beat til just blended. (realistically I just dump them in no sifting involved) transfer to bread pan sprayed with pam or greased and floured. bake at 325 til golden brown on top and tester comes out clean. the original recipe says 1 hour, I have never taken longer than 45 minutes and my oven is pretty well accurate. you can add in a few nuts if you like, they are very good in it but my DH is violently allergic to walnuts. Occasionally I use pecans as those don't bother him. In my pre WLS days I added mni chocolate chips, maybe less than 1/2 cup. I tend to use recipes as a "suggestion" and make my own little changes, like the whole wheat flour and wheat germ I started subsituting. the original recipe is called low fat banana bread from www.epicurious.com
