Hi Joann-I've been craving pancakes too. I'm thinking about making some crepes later as I really prefer crepes to pancakes. funny thing about the 10 lbs.--I bet it is water weight or something. Ya know when your body senses an infection I think we retain fluids and stuff. Just a stab in the dark. Have a great weekend.

mmmmm crepes, Love them and make them all the time for grandbabies filled with strawberries and whipped cream. Did I mention the grandbabies love me. and want to eat at my house all the time? I make healthy stuff too, but I figure homemade from scratch crepes with fresh fruit is not too bad.

Oh Willow--I bet your grandbabies DO love visiting you. My kids always loved visiting with my MIL. She would have her special recipes too. Their favorite was her american chop suey. Gosh they loved that. I first had crepes from my grandma too. Care to share your recipe?

got to give credit recipe was from www.epicurious.com from Bon Appetit http://www.epicurious.com/recipes/recipe_views/views/5385 > EASY CREPES > > > > 1 1/3 cups whole milk, room temperature > 1 cup all purpose flour > 3 large eggs > 3 tablespoons unsalted butter, melted > 1 tablespoon sugar ( I sub splenda or leave out If Im using a non sweet filling) > 1/4 teaspoon salt > > Nonstick vegetable oil spray > > > Mix first 6 ingredients in blender just until smooth. Cover batter and chill at least 15 minutes and up to 1 day. Spray 7-inch-diameter nonstick skillet with vegetable oil spray and heat over medium heat. Pour 2 tablespoons batter into pan and swirl to coat bottom. Coo****il edge of crepe is light brown, about 1 minute. Loosen edges gently with spatula. Carefully turn crepe over. Coo****il bottom begins to brown in spots, about 30 seconds. Transfer to plate. Cover with paper towel. Repeat with remaining batter, spraying pan with oil spray as needed and covering each crepe with paper towel. (Can be made 1 day ahead. Cover and chill.) > > Makes about 20 crepes. it works well with any kind of fresh fruit, cut up small and sprinkled with a tiny bit of splenda, or frozen berries thawed and a little splenda added. put inside & rolled up w. a little whipped cream or cool whip if it is a real special occasion. sugar free or regular Jam is good too. (I spread a thin layer on them and fold into quarters and serve hot. I have also left out the sugar and used as a main dish filled with ricotta beaten w/ an egg, & mozzarella, fresh steamed spinach or cooked broccoli rolled up and topped with spagetti sauce & more mozzarella or chicken mushrooms, cheese and a white sauce topped w/ more sauce and cheese. a seafood mix of shrimp , scallops, and spinach or any other veggie, with the white sauce & cheese. I love to experiment, but things with white sauce are a rare treat. to make it tho , melt 2 tb real butter whisk in 2 tb flour til well mixed & add 1 cup milk and whish til bubbling hot and thickened a little, If it gets too thick add a little more milk. add any cheese you like for a fabulous cheese sauce. & whisk til smooth and all melted. warning, dont eat this too often or you will be obese so fast your head wouyld spin. !!!!

Last week I was craving pancakes too. So my bariatric buddy and I went to breakfast at Black Bear. They have a wonderful pancake called a 7 grain/almond pancake. I put butter in the middle waited until it melted in and then just ate about the middle three inches, THE BEST PART. It was good! Stacey

Don't worry about those ten pounds. It's probably just your body trying to retain everything it needs to heal, and yea I know that's easier said than done. Hope you're feeling better soon.
