Tomato Basil Marlin Steaks
(This fish is terrific served with Greek olives and feta cheese)
Makes 4 servings
INGREDIENTS:
2 (6 ounce) swordfish steaks
2 teaspoons garlic, minced
1 tsp fresh cracked pepper
1 tsp kosher salt
2 tomatoes, cubed
4 ounces fresh basil, chopped
1/2 cup butter
2 tablespoons fresh lime juice
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a medium-sized pot, melt 1/4 cup butter and 1 teaspoon garlic over a medium-low heat. In a small pot melt the remaining butter and garlic over a medium-low heat.
When the butter in the medium-size pot is melted, stir in the tomatoes, basil, and lime juice. Just before the mixture comes to a boil, reduce the heat to simmer.
Sprinkle steaks with salt and pepper on both sides.
Arrange the fish in a baking pan. Pour the butter and garlic from the small pot over the fish.
Bake the fish for 8 minutes, then turn the fish over and bake another 8 minutes.
To serve, spoon the tomato mixture over the fish. Also top with a little of the butter and garlic sauce that the fish was cooked in.
