16 ounces water with a little oj
16 ounces coffee
Breakfast
2 egg omelet with cheese and home made salsa
Snack
1 protein shake
Lunch
1 cup canatope
1 cup grapes
1.5 ounces cheese
Snack
1 protein shake
snack
1/2 peppermint pattie candy
Dinner
4 ounces baked grouper
1 cup (maybe a little more) steamed squash
1/2 ear steamed corn
small dinner salad with fat free thousand island....
(ate the salad...but will not be able to eat ALL the rest...maybe half)
So far.....thats it

Ok today was an off day. Kid home sick, I'm sick so we ate funky.
Honey nut oatmeal with creamer, splenda and butter
Grilled cheese on sunflower seed bread (can you see a theme here? I'm craving comfort foods lol)
two cheetos cheese curls (ok, 1 and 1/2 since the dog ate 1/2 of one)
Cooking steamed beef steak, southern style roasted yukons and cauliflower in cheese sauce
Will have cheese sticks later tonight.

Valerie's Vanilla Egg Custard:
2 cups evaporated, whole, or lowfat milk
3 eggs, beaten
½ cup sugar ( or ¾ cup Splenda)
2 tsp vanilla
Fresh or ground nutmeg
1. Mix milk, eggs, sugar, and vanilla together. Beat well.
2. Pour into 6 custard cups or ramekins.
3. Sprinkle a generous amount of nutmeg on top (to taste)
4. In a deep pan, fill 1/3 way with ho****er.
5. Place ramekins or custard dishes in the water bath.
6. Bake in preheated oven of 350 for 45 minutes.
