I made it through the week..barely. No, it wasn't too bad today. Mostly because I had my vacation in mind. My hubby surprised me and took me out to dinner tonight too..Not a fancy dinner but still..

I had five containers of water, one was caffeinated

I had one cup of coffee this morning but I skipped my espresso..I got up too late.

Breakfast: waffle, small apple, sf pancake syrup and butter buds

snack: 1 oz cheddar cheese wrapped with smoked turkey deli meat

Lunch: left overs: 3 oz salmon, 3 oz lean burger meat, 1/'4 cup scalloped potatoes and 4 cauliflower flowerettes

snack: 4 sugar free peanut butter cookies, 1 Tablespoon peanut butter, 1 hard boiled egg

dinner: 1/2 a chicken burrito made wiht chicken, cheese, peppers, refried beans and some rice

dessert: 2 sugar free peanut butter cookies

totals for the day: 

Calories: 1667
Fat: 87.8
Carbs: 109.6
Protein: 120.3

Not bad..alot of carbs but still not bad. I'm more than ready for time off..

Hi, I noticed you mentioned earlier in the week you were making sugar free peanutbutter cookies.

If anyone is interested, I use this recipe:

1 cup crunchy peanutbutter (I use organic)
1/2 cup xylitol
1 egg, 1 egg white
1 tsp baking powder
1 tsp vanilla

Mix, and spoon onto cookie sheet.  I don't know what the nutritional content is, but it shouldn't be difficult to figure out.    The original recipe calls for sugar but I substitute xylitol.
