Didn't do much today. Took my boys out for breakfast and got some needed items at Walmart..then home to do next to nothing..Oh, I loaded the trailer up with the last half of the cinderblocks but didn't do anything with them..maybe tomorrow! I put some ham with fresh green beans in the crock pot..

My Easter Eats:

1/4 protein waffle, 1/2 apple, 1/2 serving sf pancake syrup and butter buds

(no espresso!)

1 oz mozzarella (no lunch meat)

1/2 egg burrito without hashed browns. Our favorite restaurant spoils me something awful..that young man can COOK!

24 oz drink mix with ice while shopping

tuna salad with balsamic vinagrete, tomato and broccoli..yum!

Dinner: 4 oz ham and 2/3 cup green beans

Dessert: a piece of sugar free cake made with pillsbury sugar free cake mix and nsa fruit ****tail and topped with some whipped topping

STUFFED..And I'm still pretty sore. I think maybe a nice hot bath is in order..

Yeah, I did alright with the cake too..although..it was really filling and I shouldn't have eaten a whole serving..that's 1/12 of the cake ..yikes.

I was up at 5:30am baking and cooking, but didnt feel it until after we got home for the day.  We had a lovely day (church at 10am, followed by lunch and treats with family).  My husband woke me at 7:30pm after I'd 'crashed' on the couch a couple hours earlier.  He didnt want me to have a hard time getting back to sleep at my usual bedtime.

Easter data for me:

Breakfast 1:
hard boiled egg
herbal tea

Breakfast 2:
None

Snack:
1/2 cup homemade fruit salsa w/ 5 Stacy's Cinnamon Sugar chips

Lunch:
6oz smoked ham
1/2 cup scalloped potatoes
1 cup broccoli
1/2 cup jello salad
2 glasses of cabernet sauvignon (over a 4 hour period)

Snack:
2 mini lemon curd tart  (I made them myself and used lower cal/low fat substitutions)

Dinner:
4oz smoked ham
2 spears of asparagus

Snack:
1/2 cup homemade fruit salsa w/ 5 Stacy's Cinnamon Sugar chips

Exercise:
None for today

Fat:  28g
Total Carb: 127g
Net Carb:  116g
Protein:  72g

I planned for Easter over a week ago, I actually came in 144 calories under my limit for today! 
I am calorie/carb cycling, so I planned on Easter Sunday as a high calorie day and made other days this week lower so that my weekly totals will still fall in range.
I was a little over on carbs, but not bad for a holiday that is usually filled with high calorie, high carb treats.

Yay for planning! We all do much better with planning. It's the running off road that gets me..

Seems to me, we all work harder on *days off* than we do when we work. I'll be feeling like I'm on vacation when I go back to work tomorrow (Tuesday)..no more toting cinderblocks and digging out dirt so they fit flat..yikes.

HAPPY EASTER MY FRIENDS!!
Good Friday & Easter are typically very sad times for me. I think of the significance & the price He paid. Its all a bit much for me, but i try...
I on the otherhand did no "planning" whatsoever. My BFFs been after me for weeks to let her know what i was going to do for Easter (if we were going to get together & do the egg hunt yada yada) - but i just wasnt feeling it. I literally didnt deside what i was going to do until about noon on friday.
I desided to, for the first time, get a HoneyBaked Ham! Ive had at other ppls houses, but have never gotten one myself. Since i discovered that they are a GRIP (rather expensive), i went in on one w/ a colleague :) Besides, sicne it was just me & my son (possibly my sister), i didnt want to have ham left overs for the next 2 months. HALF A FLIPPIN HOUR STANDING IN LINE to get the ham at 5pm on Friday - but i got one :D

Anyways - for once, we didnt go to church on SUnday. I just wasnt feeling up to it. Instead i spent the day w/ my son & together we did like 3 hours of heavy duty yard work - blowing leaves, sweeping, pulling more weeds, hacking down trees (ya... literally hacking!), digging up old dead shrubs & replanting new stuff. It was nice :)

My Easter eats:
Breakfast -

1 bear claw
3/4c potato & egg scramble

20oz vita water

Lunch -
1 LF cheese stick
3 slices turkey meat

Snack -
2oz tuna & 5 ritz

Dinner -
3oz HoneyBaked Ham (YEAAHHHH BBY!!!)
1/2c collard greens
1/2 macaroni & cheese

Desert -
Red Velvet Cake! LOL

Cals - 1009
Carbs - 89
Protein - 74
Fat - 40

I'm totally in shock about how much the holiday meats went up this year..a corned beef brisket was so expensive this year! 3 times what it was last year..and the ham for Easter..we've had ham for Easter every year and upgraded some time ago to a spiral cut..not this year. I refused to pay the prices and was going to do a left over hamhocks and beans remake of a recipe I found..Found out I still had left over ham from the last ham we had so I didn't need a ham. I really have wished to use fresh green beans in something but they never turned out right..this year the hamleft overs and fresh green beans in the crock pot was amazing!

Generally I take the leftover ham bone (stored in the freezer) with some meat attached and make hamhocks and beans for New Years..it's a really cheap, country meal that reminds me that we're all a pot or two away from an empty pot for dinner..

My philosophy on church on holy days is this..the church is usually packed with people who only go on Christmas and Easter..they're never there in the *off season* so I figure if I don't go..I save a seat for those who need it more than me

Spring planting is always exciting..I found a beautiful lilac bloom on a bush out in our front *yard* and figure I may have to plant a few more lilac bushes out there since we're putting in a patio cover on that side..

I'm rambling too much..down to business! You did awesome..I don't know where the bear claw came from but that's cool..I've been known to eat (pre surgery, pre-caring at all!) a half dozen..The numbers look great. You'll have to tell me about the red velvet cake..
