A sort of meh day..nothing exciting to report..still reeling over Whitney Houston..I'm not sure if the addictions are what killed her or what but if it was addictions, we can all identify with how hard that is..I pray for her family and friends..a real loss for all of us!

I slept in today since I took a really long nap yesterday and it kept me awake late..

coffee

1/4 protein waffle, 1/2 small apple, 1/2 sf pancake syrup

24 oz herb tea with splenda while at church, new sunday school teacher. I like him..

1/2 egg burrito

24 oz drink mix with ice

double espresso latte (I broke my coffee grinder yesterday and attempted to replace it with a Mr Coffee grinder..bleh..not good. So I boxed it back up and I'll return it. I found the Hamilton Beach one I like at ebay for 2 dollars cheaper..)

1 slice sugar free peach bread..well, part of it but I'll call it a whole slice. I'm getting bored with it..I may just have to throw the rest away and start over..maybe

24 oz drink mix with ice, caffeinated

dinner: low carb stuffed bell pepper..good stuff!

Well, I'm short on water and short on protein..gonna have to cut my losses on the protein and just go with warm herb tea this evening..that might make me sleep better..tomorrow is a day off and I have physical therapy..Hoping I can call my osteo doctor and get an appointment before my therapy sessions end (three more)..We'll see.

My name is Jennifer and I'm new to this forum.  I'll post an introduction soon.  You have probably shared this before but I would be interested in your recipe for protein waffles.  Thanks!  I have to say that you are an inspiration.

2 eggs
1/2 cup cottage cheese (I use non fat small curd)
1/2 cup plain soy milk
1/3 cup low carb pancake/biscuit mix (I use CarbQuick purchased on line from netrition.com - the cheapest I've found!)
1 scoop protein baking mix (I use CarbThin Soy Protein Baking Mix - also from netrition) I can put as much as 2 scoops into it and leave out the biscuit mix, actually..

I also add ground flax seed and flax oil (2 T flax seed ground fresh and 1 T flax oil)

this makes FOUR waffles. I make them ahead and keep them in the fridge. They fit nearly perfectly into my toaster and so I heat them up, put a half an apple or pear, and about an ounce of sf pancake syrup (that's half a serving).

They have some really good stuff..another great place to get some high protein recipes is worldaccordingtoeggface.com..she's amazing..I love her protein microwave mug cakes..
