Well, another weekend over.. Again, I missed too much water but then I didn't do anything to trigger drinking. I really need to work on that..

4 cups of coffee today.

Breakfast: 1/4 serving protein waffles with 2 Tablespoons reduced fat peanut butter

2nd Breakfast: 2 scrambled eggs, 3 slices tomato, 2 slices rye toast without the crust

Snack: 1/4 cup soy nuts

double espresso latte

Dinner: 4 oz pork country rib braised with barbecue sauce on a sandwich thin..

I'm thinking some tea before bed and I'm ready for that!

The weekend did fly by! I have a little prep work to do before I go to bed for a class I am teaching tomorrow.
0930-eggs, canadian bacon, 100 cal english muffin w lite butter and sf jelly
1200-animal crackers
1400-small square lasagna, salad
1700-pretzel at mall
1945-baked chicken, sweet potato, brocoli salad 
most of my water all my vits and no exercise but that was planned. Enjoy your week off! I may take 1 day off later this week to spend with DH since he is home after being gone for aork for three weeks.

I had a fantastic weekend. We had a girls night out planned to celebrate my birthday but 3 of us were able to turn it into a girls weekend when one of the girls started having "man" troubles Friday afternoon. Nothing like your best friends and a couple of bottles of wine to get through the tough times. 

I did manage to eat very well over the weekend. One of my girls is a triathlete and she really encourages us to be healthy. She cooked dinner for us Saturday night and I swear it was the best food I've ever eaten. Marinated Tuna steaks (soy sauce, sesame oil, sesame seeds & lime juice) that she pan seared to a rare / medium rare center and a salad that was to die for.. Mixed Greens (heavy on the baby spinach) walnuts, dried cherries and crumbled goat cheese dressed with a light Balsamic vinagrette. She also made "sushi" rice but I can't tell you much about that because rice and my pouch DO NOT get along. 

If yall have ever eaten fish and not liked it because it was dry or sat heavy in your pouches I'd really encourcage you to experiment with this recipe. Flaky, tender and moist.
