I love making chili with turkey and or lean ground beef..
For chicken, I love to take whole chicken breasts, coat them with some olive oil and spices (or lemon juice and garlic) and bake for 1 hour at 350..and then cool to be able to handle, bones removed, skin removed and pack in 4 oz packages (snack size zippy bags) and keep in the freezer for my lunches. One pack on a whole grain sandwich thin or tossed on top of a salad..yum. or dropped into chicken noodle soup to fortify it..still yummy. What can't use a boost in chicken protein?
I package my ground beef in 1/4 lb patties (96% is the BEST!) and when the rest of the family is having spaghetti and meat sauce I'm having a grilled beef patty and meat sauce..yum. Or, if I really want some stringy stuff, I cook 1/4 of a head of cabbage (shredded fine) in salted, onion and garlic water and drain and dry and pour the meat sauce (or chili) over that..You can also sub a package of broccoli slaw mix for the cabbage..works good.

2 scoops Carb Thin Soy Protein Baking Mix (get it from netrtition.com) chocolate or vanilla
1/3 cup Carb Quick (like bisquick but much lower carbs) also from netrition.com
2 Tablespoons ground flax seed
a bit of water or sf flavored syrup to make it more pourable
This goes in a waffle maker that makes four waffles..each one is about 185 calories, 8 grams carbs, 22 grams protein..after that anything you add will add carbs like sf pancake syrup..
