Getting ready to head back to work tomorrow. So I had to do laundry, clean and then I decided to make chili...wow. I did alot today!

Breakfast: 1/4 serving protein waffles, 1/2 small apple, 1/3 serving sf pancake syrup

2nd breakfast: 3 eggwhites, 2 slices rye toast, 2 slices tomatoes

No lunch ..I drank alot of coffee though..and three containers of water

Snack: 1/2 small apple.

Dinner: turkey chili, a left over "grands" biscuit toasted with butter..

Dessert: I'm gonna have a shortbread cookie and some reduced fat peanut butter.

Totals for the day:

Calories: 1506
Fat: 63.9
Carbs: 159.1
Protein: 94.6

I was feeling a bit under the weather today. So I just stayed as quiet as I could and rested often. I have a busy week ahead and don't want to fall sick now! The good news today is: no cake or cookies..

Today:
8am toast, 1/2 cup cottage cheese, 1/2 cup applesauce and herbal tea
2pm 1/2 cup soup and banana and protein drink
3pm dried pinapple
4pm Edam cheese, 1 oz.
5pm omelet (my husband was feeling sorry for me and my long face and made me an omelet. He's a good person..)
5pm ginger tea
6pm another dried pinapple
7pm protein bar

Today's totals:
calories: 1280
protein: 77 grams

plenty of fluids and all vitamins.

Everyday I see you post protein waffles and wonder: How does she make them? What are they? They sound good.
(So did the chili.)

Do you buy dried pineapple or dry your own? I played with possibly making my own jerky for a while and bought a dehydrator..It dries papaya like CRAZY! I really love that stuff, I just make so much of it it takes forever to eat it all up!

My protein waffles are made like this:

2 eggs
1/2 cup non-fat cottage cheese
1/2 cup plain soy milk
(I mix this really well, almost whip it)
2 Tablespoons ground flax seeds (I grind these myself)
(mix some more)
1/3 cup CarbQuick baking mix (I get this from netrition.com)
2 scoops Carb Thin Soy Protein Baking Mix (I get this from netrition.com also)
(mix just enough to make it come together and maybe add alittle water to come to the right consistancy)

This makes FOUR waffles and each one is 185 calories with 8 grams of carbs and 22 grams of protein..My dad even likes them. He's diabetic. But he puts alot more sugar free pancake syrup on them than I do!

My mission this week is to try and stay focused and not mess up too bad. I have a party on Saturday so I have to be good so I can "let go" on Saturday..
