Accountability - Monday
Cleaned some serious house this morning..I did some baking in the afternoon and some side dish staging. I made a loaf of pumpkin bread and a pumpkin pie..I made a casserole of yams too. The pie has splenda, the yams have splenda (no marshmallows) but the pumpkin bread is regular. I'm thinking I might make cranberry cheese bread too..maybe. Tomorrow our friends fly in from Washington. I can hardly wait!
My eats for Monday:
Breakfast: 1/3 serving protein waffles, 1/3 serving sugar free syrup
lots of coffee
24 oz Drink Mix, GV Strawberry
Lunch: 2 cups homemade chicken noodle soup, 1/3 cup pumpkin pie innards without the crust (instead of cooking this portion in the oven, I cooked it in the microwave and added a spritz of whipped topping)
24 oz Drink Mix, GV Strawberry
Snack: 1 small orange, raw
Dinner: 5.5 oz T-Bone steak, 1 small yam, 1/2 cup mixed canned veggies (wow, big dinner!)
For Dessert: 1/2 a baked apple with a sugar free short bread cookie and some whipped topping.
I need more water. I know I didn't get enough. I even forgot my vitamins. I'll catch up..
Totals for today:
Calories: 1561
Fat: 67.0
Carbs: 133.8
Protein: 116.8
That's not bad. More water and more vitamins but I'm happy with that..

I smiled when I read your post. I made pumpkin bread today, too. And pumpkin muffins (with the extra batter) and then I made pumpkin cookies. After I had consumed a muffin and 3 cookies, I froze everything till Thursday when the guests arrive! I need to start using the splenda again. I have been putting it in my coffee, but have not started to cook or bake with it.
My fluid intake has gotten better and I am pretty regular with my supplements. But I need to control the calories.
Today:
11am Bread, egg, and turkey bacon
Noon protein drink
2 pm protein bar
3pm 3/4 mac and cheese
4pm those darn chocolate chips again (1/4 cup)
5pm decaf coffee
6:30pm bread and creamed chicken and veggies
8pm more coffee, pumpkin muffin
9pm pumpkin cookies
10:30pm turkey bacon
today's totals:
calories: 1640
protein: 85 gr.
fortunately, tomorrow I am making squash...

The Splenda blend Brown Sugar is to DIE for! It's super yummy and it's only half splenda. When I do a baked apple in the microwave, I put a little of that with some butter buds and it tastes great..
You did pretty good! I know I should bake up that pumpkin I bought but I found out that a big can of pumpkin will make a pie and a loaf of pumpkin bread (and that small little container of pumpkin pudding I ate!).
