So, I'm at home still sick with a cold..I hate to be non-productive..I just hate it. But the thought of going in to work and sitting with a sore throat under the air conditioner that spews out nasty dust and dirt...I just couldn't do that...so here I sit at home. Not even interested in going on facebook...blah. I am feeling better though.

Did you know that Pillsbury has Sugar Free baking mixes for Cake and Brownies? I have to find me some of that stuff before the winter..I'll be a baking fool, I figure.

Eggface donated this recipe from her blog (theworldaccordingtoeggface.com):

2 eggs
1/2 cup cottage cheese
1/3 cup whole grain or low carb pancake mix

It makes awesome pancakes. I put 1 or 2 scoops soy protein baking mix (From Health Smart: CarbThin) and 1/2 cup water (give or take alittle) and that works for me for either pancakes or waffles.

BTW...
A waffle make I am not! lol
man - i tried it this way (the 2 ways you suggested), then tried it w/ oatmeal pancake mix (waffle recipe) & they did NOT come out the way I expected them to...
Think I will just stick to pancakes...
But at least i gave it a try - so Thanks :)

it took me a long while to get it tweeked where it came out alright..It has to do with the consistancy and the amount of water you add. The box said 1/2 cup for three scoops of the protein mix...that didn't work. So I lowered the amount of protein and increased the water..It was experimental for a long time..

Pancakes are just as good.
