Oh so tired of eggs & bacon

Hi there,

Im starting the 2nd week of the induction phase of the Atkins.
I feel I did pretty well during the first week, although it was difficult to remain under that 20g/day of carbs goal. That said, since imthe kind of person who does somehting until i get it right, i'll probably stay in the induction phase until i reach & maintain that 20g carbs/day.
The problem is - i am oh so tired of (never thought Id say it) having eggs & bacon!
Well - i guess im really just tired of the eggs since i had an omlet for breakfast every day last week.
I know you can have eggs different ways - but can you suggest anything else to have for breakfast that would be good inthe induction phase (all protein - zero carb).

I was finally able to log into the atkins site & pulled up the following:

Belgian Waffles

Ingredients:

  • 1 cup soya powder (where do i find that?)
  • 2 tablespoons granular sugar substitute
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup heavy cream
  • 3 large eggs
  • 1 tablespoon sugar-free vanilla syrup
  • 1/4 cup ice water
  • Vegetable oil spray to grease waffle iron)

Directions:

Heat waffle iron per manufacturers instructions. Whisk together soya mix, sugar substitute, baking powder and salt. Add cream, eggs and syrup and stir until well blended (batter will be stiff). Add cold water 1 tablespoon at a time until batter is easily spoonable and spreadable, about the consistency of a thick pancake batter.Spray waffle iron with oil spray. Place approximately 3 tablespoons of batter in center of a waffle iron. Cook according to manufacturer's instructions until crisp and dark golden brown. Repeat with remaining batter. Serve warm.

google recipes made with pork rinds, they have some great recipes, french toast made with them, look there are diffrent recipes

LOL I dunno about that - but i'll check it out. You never know, i might just run up on something that sounds/ looks interesting.

well its not eggs and bacon so maybe you'll like it...haha...

about 3 times a week i make the bomb scrambled eggs...very simple...

3 eggs + 3 oz grilled chicken (cut up small) + 3 tbsp salsa....scramble those mf'ers in a skillet and melt a slice of reduced fat L.O.L white american on top....

frickin yum.

edit: oh and of course the salsa has a couple carbs, but you can always substitute hot sauce.....and oh yea....good luck, btw, i know atkins is tough but it works....guaranteed!

I know im gonna have to start to dress up my scrambled eggs - thats for sure!
I hadnt thought about adding chicken to the mix though - thanks!
I cant do salsa or hot sauce (i know i know - what kind of rican am i?! lol), but i'l lfind something to throw on it.
Im actually having a good time w/ the atkins... of course this is just the end of week 1 mind you lol!!

Look for Carb Thin by Healthsmart on netrition.com...check the nutritional values on that stuff and see how you like that. The recipe for waffles calls for 3 eggs and 3 scoops of that protein baking mix and about 1/2 cup of water to make pancakes and/or waffles. I usually add cottage cheese and some Carb Quick, just for more pancakey texture and add more carbs cuz that stuff has next to NO carbs...

do you get most of your low/no carbs cooking stuff online?
Ive never done that. I like to go to the store - but they just dont offer those things here.
ie: SO FAR, I havent found "SOYA POWDER"... but ive only physically gone to 1 store. I have a couple more options & thats about it.

soya and soy are the same thing. Try looking for Textured Vegetable Protein or Textured Soy Protein too...There are alot of things in the vegetarian sections of stores that are helpful too. There are several really good brands. I loved to add that to my oatmeal...and you can put it on yogurt to add a sort of nutty crunch too...I'm not sure there are other protein products that can do that..Some people don't recommend eating alot of soy because it does elevate your estrogen levels in some people.

I do buy the items that I absolutely love and can't find in stores on line. I did find the textured vegetable protein at my local healthfood store but it was $4.15 a container. I can get it on line for $3.50 a container (if I order 12) and that includes shipping...so I buy it on line. I also fell in love with Morning Spark Grapefruit drink mix...the product has been discontinued so I found it on line by the CASE and bought 3 cases..because I couldn't see doing without it..

This year, there will be alot less of that sort of spending because my budget has been cut...I don't even want to tell you that our big boss got a RAISE while we, jerks, are having to cut back..but that's another post.
