1/2 cup cottage cheese, 2 eggs, 1/3 cup low carb pancake mix..like Fiber One..

I usually can only eat half a serving and put the other half in a container or plastic bag and refrigerate..later with peanut butter in between...yummy.

OMG...I have been craving pancakes and I saw this post yesterday. I just had to try it. YUMMY! My question is: Is there more then one kind of Fiber One mix? The one I bought has 24 g carbs for 1/3 cup serving. What do you get for nutrition info?

I figured it at 347 calories, 14g fat, 31 carb, 30 protein, 4 g fiber (mine made two good size pancakes so I would divide into two servings as well).

Thanks for sharing. This will make a yummy high protein treat.

Using NFCottage cheese and CarbQuick from netrition.com it makes the nutrition:
Calories:345
Fat:19.5
Carbs:20.9
Protein:32.5

Ialso put a splash of flavored sugar free syrup (ala DaVinci or Torano) to give them a different flavor. I even added chocolate syrup and a chunked mini sf hershey bar once...good stuff.

I have to make a determination about the pancake mix (Carb Quick) because at netrition.com (which is the cheapest place I've found)is still $3.99 a pound or $11.99 per box...it's a bit spendy to remove just 4 grams of carbs and a couple calories..So Imay go cheaper and lose some of that number benefit.

1/3 cup carbquick is 90 calories, 16 grams of carbs and 6 grams of protein. No other mix has those numbers. but no other brand is as expensive..sigh..

Thanks...your info is pretty close to mine. I don't worry about carbs too much as long as they are from good sources. It seems to be ok. I am maintaining my weight loss just fine. Thanks again for sharing your recipe. I would have never thought of adding protein-especially cottage cheese but it is yummy.

I had a very nice Friday; I did not go to work! I took the car in for an oil change, then went for a run. 4.25 miles in 55 minutes; I am slow and steady. Went home did a little work from home while the laundry dried, packed and then DD and I drove to Portland to see DH. Had dinner the played a few games and went to bed.
0900-Premier Protein drink 30 GM protein and they taste good if real cold!
1230-fried egg w lite swiss and bacon on a bagel thin
1545-fiber one bar
1715-1 serving cashews
1830-baked chicken, 1/4 c pasta and 1/2 c brocoli
2100-top 1/3 bag of 94% FF popcorn. I like the kettle corn 94% better
I lodt track of water but think I did not get quite enough as I woke up feeling very dry and thirsty. All my vitamins and such and my run. I did not get to put all this on the daily plate; I hope I stayed under 1200 calories, that is my goal until I hit goal! I feel like I can get closer to it now that I am on track again. I have never been below 187 and I am 5'8". I was up to 202 2 weeks ago and I felt physically ill from it. I was 194 on Thursday. We are taking a min vacation the end of May I would like to be back at 187 by then. I woul love to be in the 170's by October; it will be my 6 year surgiversary!

Wow...you're doing awesome! I'm so jealous of you doing all that running. For me, I'm walking alot but no running and I know I should but ... no motivation. I'm just so afraid that if I start running, I'll build muscle and the number on the scale will go UP and I'll freak. I'm still working on it with the Wii...

Keep up the good work...see ya.
