Salt by any other name...

I came across this very interesting article regarding the latest push to reduce sodium in processed meals.  I should point out that the nutritionists are arguing about the effects sodium in processed foods, not on the effects of processed food itself, but I digress.

I found this fascinating: "He and his team looked at large studies of diets in thirty-three countries. They found that most people around the world eat about the same amount of salt."  The implication is that the human body is wired for a certain amount of salt and we eat the amount our body wants.  The danger is that we could make ourselves less healthy eating reduced salt foods as our bodies then drive us to eat more calories in an attempt to get the proper amount of salt.  Did that same thing happen with the "low fat" diet?  Things to make you go hmmmm.

Salt has been used a preservative since the Bronze Age.  You would think humans have adapted to eating salt in the last 6000 years, then again, "salt" in this context is Sodium Chloride: not some the sodium you see in the modern meal.

So you have to wonder: is it the Salt of the last 6000 years causing high blood pressure or the Sodium Phosphate, Sodium Citrate and (my favorite) Sodium Stearoyl Lactylate?
