The pancakes are the easiest..
2 eggs
1/2 cup cottage cheese, small curd, I use non-fat
1/3 cup whole grain pancake mix (or low carb)
I use CarbQuick but there are other brands and as long as they are multi grain or 10 grain like they have at Winco, you should be good. Get the nutritional values for the brand you use so you know the numbers on the servings.
When I do mine I use Log Cabin Sugar Free syrup (or Mrs Butterworths-yumo). A serving is a 1/4 cup..I rarely use more than half that or...and this is my FAVORITE. Let them cool and take two and put a tablespoon of peanut butter between them...yum!
What I usually do is pour six small pancakes on the griddle and then eat only three of them. I pack the other three into my lunch and have them for a snack later. Even though they are low carb, they're still carby and have a tendency to fill me up really quick..
The numbers for just the pancakes (no syrup or peanut butter) are:
Calories: 346
Fat: 20.7
Carbs: 19.9
Protein: 32.5
The waffles that I make are made from Chocolate CARBThin mix and I find that at netrition.com. It's really good stuff and makes AWESOME chocolate waffles. It calls for 3 eggs and 3 scoops of powder/mix...so knowing what I do about the pancakes, I make it with two eggs and two scoops and STILL have to eat half now and warm up the leftovers later. For those, since the CARBThin has NO fat I do put butter on them with the sugar free syrup..I figure, I can afford that and LOVE the taste of butter.
The Carbthin Soy Protein Baking Mix breaks down like this: 1 scoop

Protein: 24
So with an egg that is 6. you get 30 grams of protein for each waffle..and just the tiny bit of carbs from the eggs..next to none. But still, filling!
