Need snack suggestions

I have been trying to get my eating under control again but need some ideas for low carb snacks.  I  want to plan a late night snack that won't destroy my calorie budget.  I have been snacking on pork rinds and popcorn but would like other options.  Any suggestions?

I bought something from HealthSmart (on netrition.com) called CARB Thin in chocolate. There's a recipe for pancakes/waffles on the side and each scoop is 24 grams of protein plus the egg makes one waffle 30 grams of protein...Make the waffles ahead of time and pop them in the toaster from the freezer and they're crunchy, sweet and very very filling..like a giant crunchy cookie...but with butter and alittle sugar free syrup, they're breakfast too!

Otherwise, I eat protein snacks like roasted peanuts or even roasted chickpeas:

Would you mind sharing your recipe for protein pancakes and waffles.  I miss those carbs.

The pancakes are the easiest..

2 eggs
1/2 cup cottage cheese, small curd, I use non-fat
1/3 cup whole grain pancake mix (or low carb) 
 

I use CarbQuick but there are other brands and as long as they are multi grain or 10 grain like they have at Winco, you should be good. Get the nutritional values for the brand you use so you know the numbers on the servings.

When I do mine I use Log Cabin Sugar Free syrup (or Mrs Butterworths-yumo). A serving is a 1/4 cup..I rarely use more than half that or...and this is my FAVORITE. Let them cool and take two and put a tablespoon of peanut butter between them...yum! 

What I usually do is pour six small pancakes on the griddle and then eat only three of them. I pack the other three into my lunch and have them for a snack later. Even though they are low carb, they're still carby and have a tendency to fill me up really quick..

The numbers for just the pancakes (no syrup or peanut butter) are:

Calories: 346
Fat: 20.7
Carbs: 19.9
Protein: 32.5

The waffles that I make are made from Chocolate CARBThin mix and I find that at netrition.com. It's really good stuff and makes AWESOME chocolate waffles. It calls for 3 eggs and 3 scoops of powder/mix...so knowing what I do about the pancakes, I make it with two eggs and two scoops and STILL have to eat half now and warm up the leftovers later. For those, since the CARBThin has NO fat I do put butter on them with the sugar free syrup..I figure, I can afford that and LOVE the taste of butter.

The Carbthin Soy Protein Baking Mix breaks down like this: 1 scoop

Calories: 98
Fat: 0
Carbs: 0
Protein: 24

So with an egg that is 6. you get 30 grams of protein for each waffle..and just the tiny bit of carbs from the eggs..next to none. But still, filling!

Hard boiled eggs.  Not as "snacky" as popcorn, but filling.  And while it isn't low-carb, I do find a glass of skim milk filling around bedtime.  I have to have something in my stomach close to bedtime or I will wake up hurting and hungry.

Oh, how about some high-protein cereal like Kashi Go-Lean (I like the crunchy version).

Thanks for the ideas.  I will definitly try the CARB Smart.  I eat boiled eggs but I am so sick of them.  I eat nuts too but have to be really carefull. Once I start on them I can't stop.  Never thought about pepperoni as a snack but I am definilty going to buy some.  I live in a very rural Appalachian area and we have limited variety at the grocery store.   The next time I get to a Super Walmart I am going to check the cereal isle out and try to find some Kashi products and do some serious label reading.  I have gotten so lazy on checking food labels and measuring food.  A food scale is going to be my next purchase.  Thanks for the suggestions.

Not to be nosy, but where are you in rural Appalachia? I'm a Pike County girl!! Moved to TN back in 02

I live in Martin County.  I was working in Pike County but had to go back on disability.  Working on getting back to work.  Hopefully something closer.  Bet TN is a big change from here.
