Accountability - Friday
Not a good evening...a friend's husband just got out of the hospital on Monday. Yesterday afternoon she came home from the market and he was gone...we're in shock. He was only 51 years old. Intestinal problems, not wls. Please, don't take life for granted. We could all have alot shorter time than we think..

5:00 am 10 oz coffee w/Sugar Free Cocoa Mix ((homemade)
6:00 am 1/3 cup quick oats, 1/4 cup tvp, 1 cup soy milk, 1/2 cup apple sauce NSA
7:00 am 24 oz Drink Mix, Tangerine Caffeinated
8:30 am 1 oz cheese stick, 1 medium apple
9:45 am 24 oz Drink Mix, Strawberry
11:00 am 1/4 pastrami quesadilla from dh's lunch on Wednesday. It was huge!
11:30 am 24 oz Drink Mix, Lemon Berry
2:00 pm 1 hard boiled egg
3:00 pm 24 oz Drink Mix, Lemon Berry
6:30 pm 4 oz beef steak, 1/3 cup mashed potatoes, 1/4 cup canned peas
7:30 pm 4 sf wafer cookies
totals for the day:
Calories: 1425.0
Fat: 55.1
Carbs: 129.1
Protein: 110.5
Too many carbs not enough protein and not enough calories..I guess I'm done for the night. I may not sleep much tonight.

I feel the same way about my food lists...sometimes I eat the same thing day after day and figure I must be so boring to watch. LOL. Like grass growing almost.
Yes, the older I get the more precious life is. I find myself planning for all of that end of days stuff..it's not pleasant to think about but it is a fact of life..it's just so shocking when it comes so young! 51...heck, I'm going to be 51 in a few weeks. I don't know enough about his condition to speak of it even but it's just so shocking...and sad.

I am basically staying Greek Yogurt 0%, add some raw honey and berries and viola Ginny has dinner while hubby is having Homemade Lasagna smothered in fresh sauce with greated cheese. I could it for him but the pasta has gluten, wheat carbs and way too many calories.
My dinner1/2 lb steamed shrimp, usually other days i pick from fish being flounder, Atlantic Chard, Wild Salmon, Farmed Raised Salmon.
With Celiac and allergies I don't have much to pick from & I tend to stay with the same things.

I think it is great that you guys still list your foods and stay on track.
How did you find out about you having Celiac? My husband thinks I have that, but I told him my weight gain was from eating too many carbs. I do feel weak and tired after I eat carbs, but since I have had the surgery 5 years ago I have several food that make me tired and weak,

The blood test was antibody & gliadan.I found out back in '85 I was Celiac...of course at that time we did not have web info available like today so I did nothing about it after a blood test idenitfied it, assumed it was another auto immune disorder I would have to deal with. I had no idea what gluten was other than it was a protein. With all the information I found online it has made my life much easier and less itchy. I would rather have pain than itch. You still need to check ingredients each time you buy the same product because the food industy has habit of changing ingredients with what they can get for less money. ie; adding maltodetrin to everything from Splenda to Slimfast.

I was barely able to get out of bed but I also had severe gastro discomfort which I know now are both symptoms of Celiac. Forthe last year I have finally got all the wheat and gluten out of my diet and my body, brain and skin thanks me every day. I have not had chronic fatigue for some time, in fact I am complete opposite as I was back then...I need a sleeping pill to put me out at night even at 2AM, energy level is super high.

We just went to visit our friend with Celiac a few weeks ago. He's doing much better since he's cut that stuff. He actually got down to 110 pounds at 6 ft 2 inches tall...we all thought he was gonna die..Now he's back up to 150 or so. He's always been skinny but at least now he has a hold on it. I've cut way back on bread and glutten too. Although, since I don't have actual Celiac it's not as toxic to me..I'm just very aware of it with it in my family.
I think that's why we eat so plainly now. steak, meat, lots of fish and real potatoes and maybe a salad...so it can be done but you have alot more issues than just Celiac..I've found alot of places with glutten free but still not okay for your diet..
We found buffalo burgers a couple years ago and that really has made it nice..Throw a couple of those on the George Foreman and there's our dinner..
For a while I thought the man that just died Thursday might have Celiac. It just sounded so much like the symptoms..but I believe they ruled it out. I would be willing to bet that he died of starvation anyway.

Dawn very well could have killed him, depending on how knowlegeable his doctor was. Many dr's don't understand if you are celiac wheat and gluten can kill if you continue to infect your gut...test only show positive if at the time you are eating gluten. He may have tested false negative if he was not eating at that time due to gastro distrubance. There is a blood test that can tell if you have it ot not, I believe that one is antibody but my own dr didn't even know about this one. It is not affected by diet because I was certainly not going to eat wheat or gluten again for gliadan testing. It will be interesting to know what gastro prob he did have.

Our friend keeps gluten out of his house completely. I guess he had a reaction to something at a restaurant or something. They must have made his lettuce wrap with bread and then changed it. The meat was up against bread for a little while..dangerous stuff.
I have some instances of rashes on my legs, arms and chest that have been the biggest issue with me. They come and go which is weird. My allergist said they haven't completely ruled out celiac with me because it won't show if I'm not eating it at that time..So I'm staying away from it for the most part. I do have sugar free cookies some and that's probably why I have the rashes..I'm not hyper sensitive YET...I know I will end up that way and I'm ready. I know I'm not doing myself any good with even alittle but it's really hard to make that break.
