Continuing Blood Sugar Issues.....3 years post-op

I know this post has been at rest for awhile, but am doing some research on this topic and was directed to your posts.  I'm almost 7 years out, have been having the blood sugar spikes and drops for the past couple of years, for some reason seems to mainly occur on weekends.  Don't know if it's because I eat breakfast later that day or what.  Saw an endocrinologist last week for thyroid nodules and asked him about the blood sugar fluctuations.  He told me what I've been reading here, that it's a known complication post RNY.  He gave me a monitor to check my blood sugars, so tried it out on Sat.  Had whole wheat Cheerios with Silk soy milk, been craving breakfast cereal for awhile but stay totally away from milk as it makes me dump, thought the soy might work better.  About 1/2 hour after eating it could feel the familiar nausea and pressure of dumping, checked my BS and it was at 198.  About an hour later felt the also familiar shaky, woozy, etc., feeling of low BS, checked it and it had dropped to 42.  Jammed some candy in and felt better pretty quickly.  After reading the posts here about seizures, got me a little freaked out.  If I didn't get something in me to raise my BS, would I likely progress to a seizure?  I was wondering, did your problem start out happening occasionally and gradually get worse?   I bought some glucose tablets to carry with me, but your suggestion of a protein bar sounds better.  I'm in South Dakota, so am in somewhat the same boat, not a lot of resources here, and my surgeon has retired.  Do you think seeing a nutritionist might help?  My eating is very far from the recommendations, partly due to having to travel for work and eating breakfast at hotel continental breakfasts, lunch at hospital cafeterias, then take-out in my hotel room.  I appreciate any other or new insight you have on this problem.  Thanks
