Hi JustJo,

How do you make the cottage oatmeal pancakes? Those sound really good.  If you could post it that would be great..

I've seen variations of this recipe on OH, but this is the one I use:

Cottage Cheese Oatmeal Pancakes

Mix together in a blender or with a hand mixer (I just use a mixer):

1/3 c. oatmeal (dry)--I use quick-cooking/instant, but I think the regular kind is fine.
1 egg
1 heaping Tbls. cottage cheese--I use low-fat.
splash of skim milk--I hate measurements like these!--I think I just use about a Tbls or so.
cinnamon (1/4 to 1/2 tsp?)
1/2 tsp. vanilla extract
1/4 c. Splenda (optional)--I definitely use it.

Coat a small frying pan w/ Pam or other spray.  Pour the whole mixture in the pan for one big pancake.  I don't remember how long on each side--just kinda watch it til it seems done.  Serve w/ s.f. syrup--or fruit & lt. Cool Whip--or just whatever you want!

Sorry I don't have the nutritional stats on this--I probably did at one time--but fairly easy to just add everything up since it's a single serving.   I kinda forgot about making this--it's been a long time (thus, my rather vague instructions!)--I'll have to make it soon!

I guess I'm pretty boring.  I have the same thing every single day (for almost three years now).  I have a protein shake - the same kind always - made with soy milk, cocoa, vanilla protein powder and frozen strawberries.  It starts me off with about 35 grams of protein.  I'm big on my shakes, though.  I drink 2-3 of them a day.  I know, boring, but it works for me.  I can't stomach most foods in the morning, so drinking works.
