B) EAS
L) TWO! pork chops, ate half of each as they got cooked, a few fried potatoes, less than a 1/2 cup salad with dressing

Pork chops (left over) make a good topper for a salad..

The list looks really good. The pasta even. Did you make your own meatball? The ones I can buy are over half "stuffing" and aren't much protein but if I make them myself...They're much higher.

Keep up the good work! Hasta.

Yes I made the meatballs. My husband doesn't eat pork, so I can't use sausage as well as beef, but they were good. I used an extra egg for protein. and went light on the filler. The purchased ones are always lighter on protein.
The pork chops were cooked on a grill at a friends, and I couldn't resist!

Very good! When I make meatballs it's beef and I put in spinach and flax meal instead of bread crumbs. Hubby used to make them with rice but we don't do that anymore either.

You did really good!

What a great idea! Do you cook the spinach first and drain it?

yeah, that would work with raw spinach..I used canned spinach and drained it (then I wrapped it in a papertowel and squeezed as much of the moisture out as I could). I'm basically lazy about cooking stuff and canned spinach is so much easier to find out of season..
