low-fat, high protein meat discovery!

I had a meal tonight I just had to share with you all. BISON BRATWURST!

OMG...they were AWESOME! We found them in our local grocery store. They come from a farm near here and have no growth hormones, no stimulants, no additives, etc. They are 100% buffalo and 100% tasty!

I always loved brats, but they are so bad for us.

Each of these quarter pound brats (they're HUGE) are only 150 calories, 2 grams of fat, 2 carbs and 23 grams of protein!

We grilled them (they come fully cooked already) and had them on whole wheat buns. At first I was really nervous because they were SOOO dark red, but WOW. The flavor was amazing.

Buffalo is a great choice if you like red meat!

I was going to note that bison meat might be difficult to locate, but thanks for mentioning Trader Joes having them. They are in my area, so I'll give them a try.  I've had burgers since surgery, and find that smaller buns (not the larger poppy seed type) and the less expensive, more fatty patties seem easier to digest. My son made burgers from a 7 % fat tube of hamburger, and it was very hard to eat and digest. Thanks. DAVE

IMO using higher fat meat for burgers is ideal anyways - if you are grilling or cooking on the forman most of the fat comes out of the meat anyways - the rest just helps to keep it moist.

You dont always have to use the leanest beef ya know? I personally use 90/10 for my burgers but other things like tacos, meatloaf I will use 96/4 since the meat would pretty much be sitting in its own fat.

I do love some bison (check out my blog for bison praise). I have the grinder attachment for my kitchenaid mixer so I buy bison steaks and make my own burgers from them. That way, I have complete control over the excess fat content. The last steak I bought made six 4.5 oz. burgers and they freeze very well. Bison, while much leaner than beef, is (in my opinion) more flavorful and thus you can have a very lean burger that's still tasty. For concerns about digestion difficulty, I've found that the number one cause of problems with meat in my case is overcooking. Anything above medium makes me feel horrible. As long as you buy from a reliable source or grind your own, a medium-rare bison burger won't kill you. It's delicious!

Around here, I can generally find the meat at Harris Teeter or Wegmans. Sometimes Giant and Safeway have it, but it'**** or miss.

Mmm...now I have to call home and tell my boyfriend to thaw out some of the bison burgers we have in the freezer for dinner! *drool*

I'm glad you mentioned this because I was shopping yesterday and saw Bison Burgers at Wegman's (east coast store)  And almost tried them. I'm not big on red meat, but LOVE organic farm raised beef for burgers...I never would have believed there was such a huge difference in flavor and texture....but there really is!   I saw it was leaner than beef...so now I just have to give it a try.  The brats sound soooo good! 

Now my head won't rest until I've tried Bison burger or brats!  LOL  Thanks alot!  LOL
